I recently saw the cutest St. Patrick’s Day cake advertised in Target’s weekly sales flyer. Instead of the traditional shamrock or leprechaun-inspired cake designs the discount retailer had a pot of gold cake that really caught my eye. Then, I looked at the price. Crusty Meatloaf Using Leftovers

Since Michele is sharing her recipes for leftovers I thought I’d share one of mine too. This meatloaf recipe is one that when I first became gluten free, I took on nearly every picnic we went to as it works well cold. It is also an excellent way of using leftover meat from a roast lamb or beef, though I wouldn’t recommend using corned beef. The crusty texture comes from the cheese batter poured over the loaf. St. Patrick’s Day is Monday. Here are some fun ideas for celebrating. Make a rainbow with paint or crayons. You can paint them with any colors, or be scientifically accurate. I still remember a teacher’s lesson of ROYGBIV for memorizing the color spectrum of a rainbow. If you have tissue paper in all the rainbow colors you can make a rainbow on your window. Cut little bits of the paper and stick on a misted window. This looks really pretty with the sun streaming in. The paper will stick to the damp window. Fit for St. Patty: Irish Lamb Stew with Irish Soda Bread

It is said that this stew will cure whatever ails you. I don’t know if that’s true but with richly seasoned carrots, potatoes and tender lamb meat–you can’t go wrong.
