What To Do With Half a Can of Pumpkin

Either the people at Libby’s pumpkin are not so truly bright or they’re very genius. I haven’t decided which yet. Maybe you can help me decide. Yesterday, I made several sweet potato and pumpkin pies and other various desserts. Our church has an annual Thanksgiving dessert where we all get together and eat pie, and for the last several years, I’ve made something. I generally don’t do pumpkin because as we’ve noted, I don’t like pumpkin pie. But this year, that’s what was requested, so that’s what I did. I didn’t make plain pumpkin pie but rather things like Spiced … Continue reading

A Southern Christmas: Chocolate Pecan Pie

My husband was raised in Alabama. Or so he says. The truth is, he moved to New England in between 5th and 6th grade. But he still claims that toddlerhood through 5th grade were his formative years and therefore, he is a Southerner. Every once in awhile, you can still hear the southern accent in his voice and he has a taste for things like grits, which I disdain. Southerner or not, I have decided to feature some “southern” recipes during this holiday season in honor of him. So enjoy honey! This recipe has bourbon in it, but it is … Continue reading

The Ultimate Pumpkin Pie with Cranberry Crunch Topping

If you want to make a plain old pumpkin pie. . .go check the back of a can of Libby’s canned pumpkin. I am a pumpkin pie bigot, I admit. But this particular pie was so good, I had to share it. It came to me via my e-mail from those lovely folks at the Food Network. . .and then I started playing with it. I know you really wouldn’t think that cranberry and pumpkin go together. . .but trust me. You want to try this pie. For the pastry, check out this blog on making a perfect pie crust. … Continue reading

Pumpkin Walnut Biscuits

I find that fresh homemade bread is an often overlooked part of the Thanksgiving meal. Most people either just buy bread, or buy frozen rolls to stick in the oven so that it seems homemade. After all, your oven may be in use for a whole bunch of other stuff. However, I find that homemade bread almost completes a meal. You can make bread (including these biscuits) a day or two before and they’ll still taste fresh. These biscuits are lightly sweetened but not too much so. This is a recipe from my favorite magazine, Family Fun. It is ‘sneaky … Continue reading

Abandon the Pumpkin Pie: Pumpkin Mousse in Cinnamon Pastries

This recipe comes, relatively unaltered, from the good folks at Nestle. In fact, (dare I say it), that the absolute best recipes come on the back of boxes and cans. This only makes sense if you think about it: these are people who want to sell their product. To sell their product, they pay cooks to come up with really good ways to use their products. And aside from grandma’s heirloom recipes, they pretty much do come up with the tastiest ways to incorporate their product into your cooking. But back to the Abandon the Pumpkin Pie series. I love … Continue reading

Abandon the Pumpkin Pie: Pumpkin Cheesecake Pie

While I don’t like pumpkin pie. . .I do love pumpkin. I especially liked this dessert when I happened upon it because it’s easy. If your kids are begging to help you in the kitchen, this is the perfect opportunity for them to test out their cooking chops. This pie is pretty much mess up proof as it’s not your traditional cheesecake with the boiling bath and such. And it should be, it’s from my favorite magazine: Family Fun. You will need: 1 9-inch pre-made graham cracker crust 2 8-oz. pkgs. cream cheese, at room temperature (Don’t skip making sure … Continue reading
