All-Star Veggie Burgerby Libby Pelham | More from this Blogger 11 Aug 2006 06:31 PM Veggie burgers get a bad rap - often from meat eaters. I love a good ground beef burger, but that is no reason to not give a taste vegetarian burger a chance. If you have never had a veggie burger - try this recipe and let me know if you love it or hate it. This burger is high in fiber and tastes well alone or when layered with normal burger stuff like ketchup, mayonnaise, pickles, etc. For this recipe, you will need one 15.5 ounce can of garbanzo beans, fresh basil leaves, oat bran, quick cooking oats, brown rice, one package of tofu, Korean barbecue sauce, salt, ground black pepper, garlic powder, dried sage, and vegetable oil. To prep for this recipe, you will need to drain the garbanzo beans then mash them really well with a fork. Chop eight fresh basil leaves. You will need one cup of cooked brown rice. In a large bowl, combine the garbanzo beans and the chopped basil leaves. Add to that 1/4 cup of oat bran, 1/4 cup of quick cooking oats, and 1 cup of cooked brown rice. It is okay if the mixture seems a bit dry. In another bowl, use your hands to mash the tofu, squeezing out as much water as you can. Drain the water and squeeze again. Try to drain as much water as possible from the tofu. Pour 5 tablespoons of barbecue sauce over the tofu and stir. Mix the tofu with the garbanzo bean mixture. Season it with 1/2 teaspoon of salt, 1/2 teaspoon of ground black pepper, 3/4 teaspoon of garlic powder, and 3/4 teaspoon of dried sage. Mix well. Form the mixture into patties and cook for five minutes on each side in 2 teaspoons of vegetable oil in a skillet over medium heat.
