Almond Cinnamon Cookies - Perfect With a Steaming Cup of Coffee

This is a delightfully simple cookie to make. But because it is cut into pieces, the presentation is elegant and lovely. Perfect with a steaming cup of coffee, this cookie is the perfect end to any family or friend get-together, but simple enough for any night of the week.

For this recipe you'll need: (for 32 cookies)

2 cups all purpose flour

1 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

½ teaspoon ground nutmeg

1 cup (2 sticks) butter, softened

½ cup granulated sugar

1 large egg

½ teaspoon vanilla extract

1 cup chopped almonds (4 ounces)

To make this recipe:

In a medium sized bowl, mix together the flour, salt, cinnamon, ginger, and nutmeg.

In a separate large bowl, beat together the butter and sugar at medium speed until light and fluffy. Beat in the egg and vanilla extract.

At low speed, beat the flour mixture into the butter mixture until it is just combined. Do not over mix. Stir in the nuts with a wooden spoon.

Shape the dough into an 8x3-inch rectangular log or into a cylinder shape. Wrap the dough in plastic wrap and chill for one hour until firm.

Preheat the oven to 325 degrees. Grease two baking sheets with butter or cooking spray. Cut the dough into ¾-inch-thick slices. Place the cookies ½ inch apart, on the prepared baking sheets.

Bake the cookies for approximately 12 to 15 minutes until they are brown and set. Transfer the baking sheets to wire racks to cool slightly, then transfer the cookies to racks to cool completely.

*If you'd like, you may substitute pecans, macadamia nuts, or hazelnuts for the almonds.

**It's very important to chill the dough until it is firm. Otherwise, the dough will fall apart when you try to cut the cookies.
