The Apple Orchard

The weekend after my big test my family and I took off for a local apple orchard. My wife was excited to finally reclaim her husband (at least temporarily) from the trials and tribulations of what has become the “testing semester.” Our son is so young that he doesn’t really get excited about something that is going to happen but rather about what is happening. Needless to say he was very happy to be spending some quality time outdoors with his parents. We arrived fairly early on but soon found that lots of people were out and about grabbing breakfast … Continue reading

Crockpot Sweet Apple Butter

What do you do with an abundance of organic apples? Turn them into sweet apple butter. It is finally the season for the wonderful smell of cooking apples and spices in the crockpot. This recipe will make your whole house smell so incredible and bring the good things of the fall season rushing into your home. The recipe will make a good amount of apple butter. I was able to fill four large canning jars plus another large glass dish of it. Because of the amount made, you can store it for use throughout the fall and winter or be … Continue reading

Apple Pancakes!

Last time it was tomatoes, but not anymore! The apples have been coming in everywhere this week, and I find myself with an abundance of them. From Johnny Gold, to Gala to Granny Smith, our fruit floweth over. Because of the abundance, I have been trying a lot of apple recipes this week, and I would like to share them. And I am not the only one. Friends and neighbors are all taking advantage of all of the available apples. My neighbor just made two different apple pies. Whether you are in the same situation now or will be soon, … Continue reading

Oatmeal Pancakes: A Simple Way To Increase Milk Supply

I’ve written before about how eating oatmeal can boost a breastfeeding mother’s milk supply. Because I plan to breastfeed for a long time and want to keep my milk supply up, I’m always on the lookout for recipes that include oatmeal. The other morning, I was really jonesin’ for some pancakes. As I searched around on the internet for a pancake recipe, I was delighted to find that many recipes included oatmeal. After comparing several recipes and tweaking them to fit personal taste (and the ingredients I happened to have on hand), this is the recipe I came up with: … Continue reading

Oatmeal Waffles with Homemade Apple Butter

No doubt about it, my kids jump up and down when I start talking about having breakfast for dinner. Breakfast for dinner is the coolest thing in the world apparently when you’re a kid. However, many moms think that waffles fall into the semi-junk food category. After all, once you douse it with syrup how healthy can it be? That’s exactly why I try to make whole grain waffles and pancakes and if possible, I avoid topping them with syrup. Did you know that you can actually buy low fat ice cream topping and it has less sugar in it … Continue reading

Two Ways To Look at Pancakes

Who doesn’t love pancakes? Most people do, but many are concerned about eating them because of their health. Today I’m posting two recipes, one for a traditional pancake and one for a more health-conscious pancake. Traditional: 1 ¼ c. flour 2 T sugar 2 t. baking powder ¾ t. salt 3 T. vegetable oil 1 1/3 c. milk 1 egg Blend dry ingredients, then add the wet and mix with a fork until just blended. Pour onto a hot griddle or skillet. Makes 6. Alternative: 1 ¼ c. flour 1 T. honey 2 t. aluminum-free baking powder ¾ t. sea … Continue reading

Random Offers from Annie’s, IHOP, Gorton’s, and More!

Every so often, I clean out my inbox and find all kinds of deals and “limited time offers”. This time, I also found some information about contests and sweepstakes. Here is a collection of random deals and offers that are going on right now. IHOP is doing the “IHOP Melt Away, Getaway Sweepstakes” right now. When I think of IHOP, the first thing that comes to mind are pancakes, not a vacation. However, the sweepstakes is connected with Grand Pineapple Beach Resorts, “the Authentic Caribbean Vacation for Everyone”, so there really is a vacation to be had! There are two … Continue reading

I’m Not Crafty at Christmas

Is it worth saving money on Christmas decorations if you spend all of that savings on band-aids and burn cream? It started out innocently enough. A good friend of mine was getting a group of us together to participate in a tradition in our small town, an annual wreath making session at the town hall. A professional crafty person would teach us how to make gorgeous holiday wreaths with a live wreath and all of the supplies included, for a mere $10. The township  actually covers most of the cost for this event, since the live wreaths alone cost more than … Continue reading

Super Reads

For some kids, getting a book in their Christmas stocking is about as exciting as receiving underwear, a toothbrush, or an apple. Fortunately, it doesn’t have to be this way. Shatter the myth this holiday season by gifting your good guy or gal with the following super reads that pit bad blood against legendary super heroes: Superman Classic: Attack of the Toyman Don’t let the name fool you. Toyman is no Santa Claus. In fact, the diabolical villain is trying to play all of Metropolis. His first move: Unleash an attack by attaching explosives to remote-control cars. Toyman’s evil plan … Continue reading
