After all, aren't we all juggling at least a few of the following: kids, husbands, housework, jobs, etc.? Who has time to cook anymore? Don't get me wrong-I love to cook. For me, there's nothing like making a homemade meal for my family. Still, time doesn't always allow me to create my "culinary masterpieces." So on the days when I either don't feel like cooking, or simply don't have the time, I made recipes like these. This recipe is fast and delicious. It can be prepared in your crockpot in less than five minutes. And the best part? All you have to do is dump and pour. Okay, and chop-a little. For Sweet-n-Sour Meatballs you'll need: About 30 meatballs (I used the frozen kind-already prepared for me) 1 (20 ounce) can pineapple chunks with heavy syrup 1 (15 ounce) jar Sweet-n-Sour Sauce, your favorite brand (you need 2-2 1/4 cups) Pinch of salt 1 small yellow onion, chopped 1 red bell pepper, chopped To make this super-easy recipe: Spray the inside of your crockpot with non-stick cooking spray. Pour the frozen meatballs (you may adjust the amounts to fit your family) into the crockpot. Top with the sweet-n-sour sauce, the pineapple chunks (with the syrup), the salt, and the diced yellow onion and red pepper (make sure they aren't too small-they should be ½ inch to 1 inch each). Cook over low heat for 6-8 hours. Serve with white rice. Tips: Adjust the amounts to suit your taste or occasion.
