More Tropical Treats: Pineapple Quick Bread

Most of us are familiar with the taste of banana bread, zucchini bread and pumpkin bread, but when was the last time you sunk your teeth into a sweet piece of pineapple bread? The popular tropical fruit, which is often associated with exotic libations, can really add a punch to a traditional quick bread recipe. Growing up in Hawaii my grandfather would add pineapple to just about all of his recipes (pineapple shrimp, pineapple chicken, grilled pineapple kabobs, etc.). Ironically, it was after devouring a batch of his homemade pineapple Popsicles that I discovered (after being rushed to the pediatrician’s … Continue reading

The Frugal Banana

Bananas are a great frugal food, but make sure that you watch banana prices carefully. Like other foods, bananas prices will rise, due mostly from the cost of shipping them to your store. The average banana price here in my little corner of Pennsylvania is about 79 cents a pound, currently. About two weeks ago, the average price seemed to be 49 cents a pound. There are still two places where I can find the bananas for less here. The first is Trader Joes, a health/gourmet food store. At Trader Joes, bananas are selling for 29 cents pound. The second … Continue reading

National Banana Bread Day

Every once in awhile I like to blog on a silly food holiday. I don’t necessarily celebrate all my silly food holidays although I admit that if I can squeeze in some homeschooling along with cooking–I’m usually game. Sadly, I dropped the ball. Yesterday was National Banana Bread Day. But I was out doing the family’s shopping for the week. I completely neglected my e-mail informing me that February 23 is National Banana Bread Day. The reason this is a travesty is because it just so happens that I have the best banana bread recipe in the world. It’s one … Continue reading

Banana Stuffed French Toast

Every once in awhile I run into a recipe that I deem so yummy, I just have to make it and share it. This is one of those recipes. It just looks like it would be tasty. And of course it would. Stuffed French toast in this family, is somewhat of a staple. It’s yummy, so my kids think they’re getting dessert. It doesn’t require syrup because it’s that good. (Although with this particular recipe, I’m very partial to homemade, warm strawberry syrup.) This particular recipe I came across while searching through the Food Network site for good recipes to … Continue reading

Holiday Quick Bread with a Tropical Twist

I don’t know about you, but for me banana bread falls into the category of “quick bread.” It’s fast, the ingredients are affordable, and it doesn’t require the sweat or time associated with kneading, proofing and punching down. If you are tired of baking the same ol’ Christmas cookies year after year you might consider going the quick bread route this holiday season. They are the ideal homemade treat to pass out to friends or family members as gifts. They also make great additions to a holiday brunch. I used to make the following recipe each December and take it … Continue reading

A Cheap Meal Out (and a Winter Coat for 85 Cents)

Last Saturday, we decided to take a trip up to a tourist spot, Lancaster, Pennsylvania. Many people vacation there because Lancaster has a large Amish community. Sure enough, there are plenty of fun things to do and buy. There are handmade items, such as quilts and furniture and plenty of yummy pies, cakes and bread to purchase. While we can’t resist picking up a pie, our usual stops in Lancaster have nothing to do with the Amish tourist trade. Instead, we focus on where the value is. Our first stop is an Amish-run natural food store. The store is tucked … Continue reading
