Banana Nut Muffins With Cream Cheese Frosting

What's better than banana bread than banana muffins topped with cream cheese frosting? You've got to try these.

For this delicious recipe you'll need:

3 Cups all purpose flour

1-teaspoon baking soda

½ teaspoon baking powder

1-teaspoon salt

½ teaspoon nutmeg

½ teaspoon cinnamon

2 Cups granulated sugar

1-Cup vegetable oil

1-teaspoon pure vanilla extract

3 eggs, room temperature

4 ripe bananas, mashed with a fork

For the frosting:

3 ounces cream cheese, at room temperature

6 tablespoons unsalted butter, at room temperature

1/3 cup mascarpone cheese, at room temperature 3 tablespoons honey 1/2 cup chopped walnuts, toasted

To Make This Recipe:

In a medium-large bowl, add flour, baking soda, baking powder, salt, nutmeg, and cinnamon. Mix together with a wooden spoon and set aside. In another bowl, mix together sugar, vegetable oil, vanilla, and eggs. Add 1/3 of the dry ingredients to the sugar mixture. Next, add the mashed bananas, mixing to combine, Add the remaining flour mixture and combine but do not over mix.

Line 18-20 muffin cups with liners and fill each muffin cup almost to the top. Bake in a 325 degree oven for 25 minutes.

When the muffins are cool, top with the frosting.

To make the frosting, use a mixer to combine the cream cheese and butter. Add the mascarpone cheese and honey and mix until smooth.

Top the muffins with toasted walnuts.
