Bread Machine: Ricotta Breadby Mary Ann Romans | More from this Blogger 28 Aug 2007 12:51 PM If you are looking for a bread machine recipe that you can add to your personal home recipes, this may just be the one. This yummy, moist bread is a favorite in my household. I usually make three or four loaves a month. The ricotta cheese gives the bread extra protein, which is always good when it comes to growing kids. This bread is so good that I once accidentally left out the butter and no one even noticed. It wasn't until I opened up the microwave later in the day (that is where I melt my butter) and found the butter still sitting there. You can serve this bread with an Italian meal, although I think it goes so well with just a regular old chicken dinner. And, my kids love it buttered for a snack. For this bread, you'll need the basic or white bread setting. This recipe makes a 1-1/2 pound loaf, and I recommend using a medium crust setting on your machine. Because of the ricotta milk and the cheese, you can not use your delay setting for this bread. A good general tip when using milk as an ingredient is to bring it up to room temperature or even slightly warm. Place the milk in your glass measuring cup and microwave it for 30 or 40 seconds before placing it in the pan. You can skip this step if your bread machine has a pre-warm setting that will warm cold ingredients automatically. INGREDIENTS:
DIRECTIONS: Place the ingredients in your bread pan in the order that is recommended by your manufacturer. (Generally, this is wet first, then dry, then yeast.) Select your setting and press start.
