Can I Be the Biggest Loser?

After trying on evening gowns for the Marine Ball and looking like a stuffed sausage, I have decided to get serious about weight loss again. Which is not easy when blogging about all these delicious recipes! I've been watching "The Biggest Loser" and hoping to gain inspiration from there and the weight loss blogs here at Families.

When I visited "The Biggest Loser" web page at NBC, I found this yummy pasta recipe and wanted to pass it on:

Angel Hair with Rockin' Red Clam Sauce

For this recipe, you will need one small yellow or white onion, cloves of garlic, 3.5 ounces of baby clams, a can of crushed tomatoes, dried oregano leaves, extra virgin olive oil, red pepper flakes, Nutrition Kitchen Angel Hair Style Golden Whole Soybean Pasta, and reduced fat grated Parmesan cheese.

To prep for this recipe, you will need to chop enough onion to make 1 1/2 tablespoons. Peel and mince two garlic cloves.

Bring some lightly salted water to boil in a large pot. While you are waiting on that, spray a skillet with non-stick spray (preferably olive oil). Place the skillet over medium heat and add the 1 1/2 tablespoons of onion and two minced garlic cloves. Let this cook for about 4 minutes or until tender. Drain the clams and add those to the skillet. Let the clams cook for 2 to 3 minutes then reduce the heat to low. Add 1/2 cup of crushed tomatoes, 1/2 teaspoon of dried oregano leaves, and 1/2 teaspoon of extra virgin olive oil. Season the skillet mixture with red pepper flakes as desired.

Add two ounces of pasta to the boiling water and let it cook for 3 minutes or until done. Drain the pasta and add it to the skillet mixture. Mix well. Sprinkle with one or two teaspoons of reduced fat grated Parmesan cheese before serving.
