Mexican Style Meatloaf Roll

When I mention meatloaf for dinner to my family, there is no excitement. I have always used the same old recipe: Hamburger, egg, onion, tomato juice, bread crumbs, salt and pepper... Meatloaf is a traditional main course that used to be part of a weekly menu.

With Christmas over now, my family is already tired of the usual left overs and wanted something different. So, I decided to totally change things and make a smoked sausage dish. This dish takes a while to make, but it is worth it. I always make extra so I can have some the next day on a bun.

Never one to shy away from spicy dishes, I loved this one when I found it. The jalapeno and blue cheese combination is perfect for the burger and the firehouse fries (named so because they were invented by firefighters) can be made as spicy as you can stand them.

This recipe contains three of my favorite ingredients - mushrooms, ham, and cheese. I think it would be great especially if you have leftover ham after a holiday or Sunday dinner, but you can also buy small packages of diced ham in the meat department.
