Mexican Corn Bread

Have you heard of Mexican Corn Bread? Until I had this dish I did not know what Mexican Corn Bread was. The title makes it sound like a simple corn bread, but it's actually a hearty casserole made mostly from ground meat, cheese, corn and corn meal.

Noodle Kugel

When I see the word "noodle" in a recipe, I am pretty much instantly confident I'm going to like it. Unless it contains ingredients that are too spicy for my taste, or seafood I'm not familiar with, I'll generally file it away for future use. Why? Because noodles are delicious.

Baked Spaghetti

When I was getting married, my matron of honor gave me some of her favorite recipes. One of her recipes was for making Baked Spaghetti. This dish was one of the first meals I made for my husband after we were settled in our small apartment, and we both thought it was a great dish.

My family loves the Hamburger Helper meals. The most popular one is Chili Macaroni. Hamburger Helper is a great way to save us some time in the kitchen. Most of the time, you just need to add the meat, usually hamburger, turkey or chicken, and sometimes milk.

Left Over Beef Casserole

I fixed Roast Beef for dinner the other night. I like to buy the roasting bags, because I can basically put it in there and forget it until the timer dings. I had some beef left over, so I stuck it in the fridge hoping I would get creative tomorrow.

There have been times when I was either too busy or sick and was unable to fix a dinner. When I cook dinner everyday for my family, I fix a large amount of everything in order to fill everyone up. I usually double all my recipes. Life keeps us busy, even for those of us who stay at home.

We are always looking for new ways to try pizza. When I ran across this recipe, I just had to try it. The prep time is really short and the family was very satisfied. It got 12 thumbs up in my house (five kids and my husband) Every time I fix it, I think of another way it would taste good.

I haven't come up with a new casserole recipe in quite a while. But last night, as I was scrounging in my cabinets and fridge trying to find something to make, this casserole was born. It is surprisingly delicious, with tastes ranging somewhere between an enchilada, taco, and tamale.
