Super Simple Salads

Are you hosting Thanksgiving dinner this year? In our family even if my mom is the one preparing the main meal we all chip in by bringing a dish to pass. For some reason I’m always told to bring the salad. (Likely because one year I brought burnt pie to Thanksgiving.) I’ve since redeemed myself with the following salads. Both are super simple to make and have proven to be major crowd-pleasers—–even those who say they hate salad end up having seconds and thirds. And what’s nice about these recipes is that you can prepare them the night before, leaving … Continue reading

Just How Healthy Is Your Salad?

I’m really not a burger and fries kind of person. Which is not to say that I don’t indulge in high calorie foods, it’s just that when I pig out it’s usually on pulled pork and bread pudding. The rest of the time I simply have a salad. Wait! Don’t stop reading. I’m not bragging… I’m segueing. For months (nay, years) whenever I was forced to eat at a fast food restaurant (I must confess I despise fast food restaurants but I have a kid who loves McDonald’s fries—hence our visits) I would order the salad. I did so simply … Continue reading

Chicken Caesar Salad

This is a great recipe for the summer. The chicken can easily be made ahead of time, such as during the cooler part of the day. This will help keep the heat out of your house when it is warm. For economy and convenience, you can also make some extra chicken and pair it later with a veggie for a meal in itself. The salad is refreshing, yet filling, and it has earned two thumbs up from even my pickiest eaters, ages six and two. I hope your family likes this recipe as much as mine does. This recipe will … Continue reading

Staying On Atkins At the Buffet

The Atkins diet allows for a fairly wide variety of food choices. There are limitations, however, especially when you are still in Phase 1 of the diet. I found it was much easier to eat at home, then to try to stay on Atkins while dining out. Going to a buffet can be challenging, but it is manageable. I was on the fourth week of the Atkins diet when my husband and I decided to eat at a buffet. This was something we did on occasion before I started the Atkins diet. I believe it was me who suggested it. … Continue reading
