Back to the Basics: Lemon Artichoke Chicken

The long holiday weekend is coming to a close, which means most families will be closing up the grill for a few days and the clan’s designated cook will be whipping up meals from the kitchen rather than the backyard. It’s back to the daily grind around here. In my state most schools are still in session for another two weeks so we aren’t quite in summer mode just yet. (Though we got a nice taste of it this past weekend.) For our family that means sticking with our traditional weekly menu, which includes at least three nights of chicken … Continue reading

Individual 3-Cheese Chicken Florentine

I love this recipe because it uses fresh ingredients. Fresh spinach has to be at the top of my list for favorite foods–and it’s definitely at the top of my very short list of favorite raw vegetables. Packed with super duper vitamin power, if you can disguise it in cheese to get the rest of your family to eat it; it makes a deceptively delicious supper. For this recipe, you’ll need individual ramekins. You can also bake it in a big casserole dish but I have to tell you that the presentation of an individual ramekin can’t be beat when … Continue reading

Chicken Tetrazzini

I’ve recently discovered chicken tetrazzini as a delicious and quick comfort food that offers lots of possibilities to a growing family of foodies. In actuality, I’ve started to stock a file away in my giant recipe collection for recipes to use up the leftover chicken when I roast a whole chicken. This makes making the recipe easier. . .otherwise you have to cook chicken and then put everything together. This chicken tetrazzini is one such recipe. The trick to making a smooth sauce is to add ingredients gradually to a hot butter and to add the ingredients while stirring constantly. … Continue reading

What to Do With Your Leftover Turkey

Yesterday morning I had to clean out my refrigerator. I needed to make room not only for the turkey and other items I bought, but for the food that family will bring on Thanksgiving. I also went grocery shopping for all of the things that I need (at least I hope I remembered everything). But when I shopped, I also picked up some extra ingredients for the day after Thanksgiving. What to do with those turkey leftovers? Turkey sandwiches are always yummy. But I have a favorite recipe that is perfect for the colder weather. It is Turkey Rice Soup. … Continue reading

Frugal Uses for Leftover Turkey

Turkey is pretty popular around our house. We don’t just cook whole turkey’s though, we often buy turkey breasts, deli meat and ground turkey. We substitute ground turkey for many of our meals that call for ground beef. Honestly, the turkey just tastes better – it’s full of flavor and is of course, a much healthier choice. The thing about turkey is that if you buy a whole bird, it’s a lot. We are always faced with leftovers, but that simply is not a problem for us. We found great, creative and tasty ways to reuse the turkey. Here are … Continue reading

Dad’s Losing It: Back on Schedule

Okay, now we are cooking with gas! My back feels pretty darn good and as a result I was able to hit the gym twice at the tail end of this snowy week, once for mere 27 minute walk on the treadmill. The second trip allowed for more time, and I completed a 40 minute total body workout which saw me walk for 22 minutes and proceed to work on the ab crunch, rowing, hip abductor and adductor, and the overhead pull down machines. Soundtracks were the new, yet to be released Bright Eyes “Four Winds” EP (exactly 27 minutes … Continue reading
