Chili in a Flash-All Day Flavor in 15 minutes!

If you're like me, you try to feed your family quality meals without spending an eternity in the kitchen. After all, it's hot outside, you're busy, they're busy, and who has time to chop and prep and chop and prep some more? Not me!

Here's a simple chili recipe that I'm making tonight. It took me no time to put together. It's simmering away on my stovetop as we speak. The aroma is amazing. I can't wait to dive in and neither will you when you see how easy it is!

For this recipe you'll need:

2 pounds ground beef (low fat, otherwise you'll need to drain the oil)

1 onion, chopped (can be yellow or red depending on your taste)

2-3 garlic cloves, minced finely (Go ahead, go for three!)

1 regular (15oz) can stewed tomatoes

1 large (about 27 ounces) can tomato sauce

1 store-bought chili seasoning packet (any brand)

2 TB chili powder

1 TB granulated sugar (can use sugar substitute if you're watching your carbs)

2 tsp. kosher salt

To Make:

In a large pot, brown the ground beef with the onions and garlic. Drain oil if necessary. Sprinkle on the seasoning packet, additional chili powder, salt, and sugar. Next, add the tomato sauce and stewed tomatoes (you'll need to break them up with your hands).

Bring to a boil. Cover. Reduce the heat to low and simmer. If you only have 15 minutes, simmer on medium heat for 15 minutes. If you have 2 hours, simmer on low heat for 2 hours. Either way it will be delicious. You can also cook this meal in a slow cooker. Simply brown your beef, onions, and garlic as directed above, put into crock pot, add seasonings, tomato juice, and stewed tomatoes and mix well. Put the lid on, and cook on low 8 hours or on high for 4 hours.

Top chili with your favorite toppings: shredded cheese, raw onion, sour cream...or all three! Scoop with crackers for an added treat.
