ABC (All ‘Bout Chicken) Recipes

It’s all about the chicken in our home. The versatile meat is affordable, easy to prepare, and best of all (for me, anyway) loved by my young (and periodically picky) daughter. The following simple chicken recipes are ideal for busy home cooks who don’t have a ton of time to spend in the kitchen, but still want to serve up a healthy meal: CHICKEN NOODLE BAKE Ingredients: 1 cup diced onion 1 cup diced celery 4 tablespoons, divided Salt and pepper 2 cans (10 3/4-ounce) cream of chicken soup 2 cups milk 1/4 teaspoon ground black pepper 1 cup sour … Continue reading

A Dinner Made of Chocolate: Chocolate Chicken and Chocolate Cherry Cookies

This Halloween your kids will likely haul in enough chocolate to eat for breakfast, lunch and dinner. As undesirable as that may sound (to you, not them) there is something to be said for meals featuring the popular sweet treat. The following recipes incorporate chocolate, but one is a bit more nutritious than the other. The Chocolate Chicken Mole recipe uses bittersweet chocolate to complement the cinnamon, peanut butter and chili powder that are also featured in the dish. The flavorful combination is then poured over chicken breasts to yield an incredibly moist and delicious bird. The second recipe for … Continue reading

Ham and Cheese Stuffed Chicken Breasts

I am amazed what my family and kids will eat when it’s stuffed with cheese. This is the dish du jour next Sunday when all my little underlings will be bestowing me with gifts. Ahem. . .or so the theory goes. In any case, it’s one of our favorites because it’s easy and delicious and simple. You can also, if you slice really thinly, sneak in some carrots or other vegetable type things while you’re stuffing as a means of squeezing extra veggies into your kids! You will need: 1/2 cup grated Monterey Jack cheese 2 tablespoons chopped ham 2 … Continue reading

Chipotle Chicken

Yesterday, I spent time ranting to you about what chipotle is not. However, I didn’t really tell you what a chipotle is. I felt it necessary to disabuse people of the notion that Tex Mex and chipotle are the same because they are in fact not. Chipotle is essentially a “fully ripened” (that’s the politically correct term for saying the chili is left on the vine until it’s all shriveled, brown and unappetizing) smoked jalapeno pepper. It’s not quite as spicy as a jalapeno but has a very deep flavor that it lends to a dish. I’ve heard it described … Continue reading

Cilantro Lime Mango Grilled Chicken Sandwiches

Here is a great recipe to try out using fresh cilantro. Cilantro is a strong herb that lends a distinctive crisp and fresh flavor to whatever it’s in. This is what I call a fancy sandwich. The chicken is marinated, the vegetables are then grilled with the chicken, and you even have to make your own condiments for it. Fancy enough to impress guests, and absolutely delicious; you won’t regret going through all the trouble. I adapted this recipe from a similar one I found on all recipes.com. For the Marinade, you will need: 1/4 cup finely chopped fresh cilantro … Continue reading

La Hacienda at the Mexico Pavilion

One thing that definitely has me wishing I lived in Orlando: the restaurants at Disney World. I’m sure I’m biased, thinking that Disney’s magic would also somehow carry over to its culinary experiences, but whenever I hear about all the restaurants at Disney World I practically salivate. Mine is the unfortunate story of a girl who loves new and exotic food experiences (I wouldn’t say I’m a foodie, because I’m not particularly bothered about how fancy the food is) but doesn’t love urban life. I’m happiest when in bucolic surrounds, but obviously there just isn’t usually a great variety of … Continue reading

McDonald’s: Foods Less Than 300 Calories

We all know that fast foods are not a good thing to have especially if you are trying to lose weight. When I totally cut out fast foods a few years back the weight dropped off me a whole lot faster. Since that time I have eased up on myself a bit and allowed some fast foods back into my life. However, I have a rule for myself that only certain things are allowed. The rule for me is that the item has to be less than 300 calories or I cannot have it. Here is a list of allowable, … Continue reading
