Chocolate Easter Desserts

Chocolate and Easter go hand-in-hand, so instead of trying to avoid the inevitable you might as well join in the sugar rush.

The following simple chocolate desserts are perfect for an Easter potluck:

TRIPLE CHOCOLATE BUNDT CAKE

Ingredients for Cake:

1 box devils food cake mix

1 small box instant chocolate pudding mix

2 tablespoons espresso powder

1 cup sour cream, room temperature

3/4 cup vegetable oil

1/2 cup water

4 large eggs, room temperature

12 ounces semi-sweet chocolate chips

Ingredients for Glaze:

6 ounces semi-sweet chocolate baking squares

6 ounces butter

2 tablespoons light corn syrup

Directions:

Preheat oven to 350 degrees.

In a mixing bowl, combine cake mix, pudding, espresso powder, sour cream, oil, water and eggs. Mix on low speed until moist. Beat on medium high setting for 2 minutes, until thick and well blended. Add chocolate chips.

Pour mixture into bundt pan.

Bake 50 to 60 minutes.

Cool cake in pan for 15 minutes before transferring to wire rack.

For glaze: Melt chocolate squares, butter and corn syrup in double boiler.

Remove mixture from heat.

Let cool for about 10 minutes, then drizzle on cake.

CREAMY CHOCOLATE BROWNIES

Ingredients:

1 package (21 to 24 ounces) brownie mix

2 tablespoons warm water

2 cups (8 ounces) Mascarpone cheese

3 tablespoons sugar

1 egg

Powdered sugar

Directions:

Preheat oven to 375 degrees.

Grease bottom of 13 by 9-inch baking pan.

Prepare brownie mix according to package directions.

Pour half of batter into prepared pan. Add Mascarpone cheese, sugar and egg. Blend until smooth.

Drop mixture (by spoonfuls) over brownie batter, then top with remaining brownie batter.

Use a knife and swirl cheese mixture through brownies, creating a marbled effect.

Bake for 30 to 35 minutes, or until toothpick inserted in center comes out clean.

Sprinkle top with powdered sugar before serving.
