Chocolate Mint Meltaways One of the worlds best flavor combinations - chocolate and mint!

INGREDIENTS: 1 1/2 cup mint-chocolate chips 3/4 cup butter, softened 1/2 cup confectioners' sugar, sifted 1 large egg yolk 1 1/4 cup flour 1 1/2 tbs vegetable shortening 2 tbs almonds, toasted and chopped

DIRECTIONS: 1. Preheat oven to 350. Melt over hot water 1 cup of mint chocolate chips; stir until smooth. Set aside. 2. In a large bowl, combine butter, confectioners' sugar, and egg yolk. Beat until creamy. 3. Add melted chips and flour; beat until well blended. Drop by heaping tspfuls onto ungreased cookie sheets. 4. Bake at 350 for 8 to 10 minutes. Allow to stand for 3 minutes before removing from cookie sheets. 5. Cool completely on wire racks. 6. Meanwhile, combine over hot water the remaining 1/2 cup of mint-chocolate chips and vegetable shortening. 7. Stir until chips are melted and mixture is smooth. 8. Drizzle each cookie with 1/2 tsp of the glaze; sprinkle with almonds. Chill until set.
