My Cupcake Kid

You might think that a kid with a sweet tooth is, while normal, not exactly ideal. We want our children to eat their veggies, have balanced diets, and to the extent it is possible avoid over-eating in categories that we know to be harmful to them in one way or another. Sweets are characteristically in this latter category, as they are rumored to cause hyperactive children and definitively rot teeth according to dentists and tooth-oriented businesses everywhere. So you’d be forgiven for thinking that my own little cupcake kid is for some reason a bad thing. You’d be forgiven for … Continue reading

Love Chocolate? Try This Mississippi Mud Cake!

I have mentioned before that my spouse is from the South. His mom is a great cook. All of my really exceptional, ‘make-my-guests-say-wow’, desserts come from the South. All of my super duper phenomenal tasting chocolate recipes–come from the South. I have yet to visit any part of the South other than Florida, but I’m thinking that part of this “Southern hospitality” or “Southern charm” that I keep hearing about, must have something to do with the desserts. Seriously. . .I haven’t met a recipe or a cook for that matter, that hails from the South, that wasn’t simply scrumptious. … Continue reading

The Serious Chocolate Lover’s Chocolate Cake

Have you ever seen the gigantic chocolate cake that Costco sells? It is a 5 layer chocolate cake, with chocolatey whipped frosting and then it is smothered in chocolate shavings. Even one small piece is enough to send you on a sugary induced high and it’s one of the few cakes that’s too rich for even me to have a big piece. (But, I never said anything about bites here and there.) In any case, I’ve been searching for a recipe that is similar. I’ve been looking for a recipe for the kind of chocolate cake that stands up and … Continue reading

Calling All Peanut Butter Lovers! Peanut Butter Cake with Milk Chocolate Frosting

Can you say mmmmmmm???? This is a unique cake because it is actually a peanut butter cake. Most cakes have peanut butter in them or you can catch a hint of peanut butter in a few bites. . .but this is all peanut butter flavor baby! My husband says it tastes like a giant Reese’s Peanut Butter Cup. Whatever. It’s delicious and of course its rich texture screams out for a glass of milk! (This is a version of a recipe I found in Cooking Pleasures Magazine.) For the cake you will need: 2 1/2 cups cake flour 1 teaspoon … Continue reading

Chocolate Zucchini Cupcakes with Peanut Butter Frosting

These are seriously some of the best chocolate cupcakes I’ve ever had. I suspect that the additional zucchini makes them extra moist. Maybe it’s the peanut butter frosting which is also a mighty tasty combination. They are incredibly rich though such that they practically require a glass of milk in order to go down smoothly. In any case, these are cupcakes to impress guests with. I found the recipe in the (gasp) garbage at my mother in law’s house. Apparently someone had pulled it out of a Better Homes and Gardens magazine and was through with it. Let me assure … Continue reading
