Quick and Easy Chicken

You know what it’s like you’ve come home from work or you’ve been busy all day with a million chores, come dinner time you just want something that is quick and easy. Too often we forget that sometimes those quick and easy meals can be just as tasty as the ones we spend ages over. Yesterday was one of those days for me, by the time I’d finally finished with doctors and x-rays but that’s another blog for another time. The last thing I wanted was an elaborate meal to cook. So here is a really quick chicken meal. Although … Continue reading

Coconut Curry Chicken

As you probably know by now, I love recipes that are quick to make. This chicken dish certainly is. I’m a bit like Mary Ann in that I’m a huge fan of garlic and onion in cooking and tend to use both liberally. So if you’re not as keen on garlic you might want to reduce the quantity in this recipe and leave it at one clove of garlic and use a smaller onion. I found out early on in my married life not to tell my husband what was in his meals or he’d begin telling me, like Mary … Continue reading

Add New Life to Chicken

If you cook for a large family, then you are well acquainted with the challenges of pleasing a plethora of palettes. Even something as simple as pizza can yield a dozen different requests. The same can be said for chicken. Growing up my grandfather would often make a few different chicken dishes to feed the eight of us. The following recipes are family favorites, and prove that you don’t have to spend the entire day in the kitchen to make a multi-entree meal. DIJON MUSTARD CHICKEN Ingredients: 3 pounds boneless, skinless chicken breasts 1/2 cup flour, seasoned with salt and … Continue reading

Autumn Recipes: I is for Indian Curry

Residents in India are preparing for the post-monsoon period (October-December) and will be experiencing highs in the 60s for the rest of the year. Their “fall” weather conditions are similar to what many locals in the Southern portion of the U.S. experience in October, though from the research I’ve done it doesn’t appear as though their daily menu changes dramatically from season to season. This next recipe is considered a staple in the region and is a familiar sight in homes and restaurants regardless of the season. Still, if you are looking for a unique addition to your family’s dinner … Continue reading

Kicked Up Chicken Salads

Forget about the traditional chicken salads your grandma used to make. You know the ones where it was hard to see the chicken chunks through all that mayonnaise. These next recipes add a new twist to the childhood classic. The first recipe combines crunchy apples and pecans with the tartness of cranberries and the sweetness of coconut. (All that, plus the chicken.) The dish couldn’t be easier to make and it never fails to get guests excited about eating salad. I like to serve this recipe in lettuce leaves and eat it like a wrap. It’s also a fun way … Continue reading

Keep it Simple

Cooking for guests can sometimes be tricky, particularly if they have any specific allergies. I try to always check with anyone we invite for a meal if they have any allergies. There’s nothing worse than watching everyone tucking in to a meal and not being able to eat it. It’s something I encounter at times if people don’t know me well and know I am wheat and gluten and honey free. One of the people we had over for a meal didn’t eat red meat or chicken. Not a problem, I assured her. The weather was cool and I had … Continue reading

Healthy Cuisine Choices – Part 1

Growing up in the south, I knew my food wasn’t health. Everything is battered, fried, and usually dunked in some type of sauce and gravy. Although it normally tastes incredible, as I aged, I realize that I need to change the way I eat and began looking for healthier alternatives. Here are a few cuisines that provide health choices, provided you don’t “Americanize” them. Follow traditional recipes and they will not only be yummy but nutritious as well. Vietnamese We recently visited Philly and ate at a wonderful Vietnamese restaurant. It was my first experience with this cuisine, but I … Continue reading

The Unthinkable Happened

The unthinkable happened. In the middle of cooking a meal the other night, our crock pot died. It was working when I’d turned it on and when I checked an hour or so later. The next time I went to add another ingredient, it was cold. I had no idea how long it had been off. I hastily transferred the meal to a casserole dish and put it in the oven. As I thought about it, I got more than my money’s worth out of my slow cooker. It must have been a good twenty years old and has plenty of … Continue reading

Tasty Nut Loaf

If you want to protect your heart, experts recommend including a small amount of nuts in your diet. Those who eat nuts on a regular basis are less likely to suffer from heart problems. Nuts are also a good source of protein and rich in fiber. These are all good reasons not to ignore nuts. But rather than just keeping nuts for snacks, where it is very easy to overindulge on them, here’s a main meal suggestion. Instead of the traditional meatloaf, why not try this tasty nut loaf for something a bit different? Yes, it is gluten free. HINT … Continue reading

Great Potatoes

Not everyone likes rice. I have a friend who doesn’t consider a meal finished unless it contains potatoes in some form. But potatoes can get boring so here are a couple different ways to use the humble spud, as we call potatoes in Australia. Indian Potatoes These are great served as part of a curry meal instead of rice and will keep people like my friend happy. HINT Make sure if you use fresh chilies, you wear disposable gloves and throw them straight out afterwards. We keep a pack of disposable gloves in the panty just for chilies. Ingredients Quarter … Continue reading
