Coke is IT in Carrot Cake

Recently, Food Blogger Valorie posted a pork chop recipe that called for a cup of Pepsi. She then wrote of her preference for Pepsi over the perennial cola taste test winner Coke.

Personally, I can't really tell the difference between the two, but then again I rarely--if ever--consume carbonated beverages. However, I am not opposed to using them as an ingredient in recipes.

The following recipe is one I stumbled across when I was looking for unique ways to use up all the raw carrots I have sitting in my refrigerator. It's from my mom's recipe collection (though it is not her creation), which she bequeathed to me after I gave birth to my daughter.

If you love carrot cake (which I do) and have been looking for a recipe that includes an unexpected kick, I would highly recommend giving this recipe a try. The coke is incorporated in both the cake batter and in the special syrup topping. It's a sweet treat that any cola lover will enjoy slurping up... with a fork.

COCA-COLA CARROT CAKE

Ingredients for Cake:

2 cup flour, sifted

1 teaspoon baking soda

1/2 teaspoon salt

2 tablespoons cocoa

3 eggs

1-1/2 cup sugar

1/2 cup vegetable oil

3/4 cup Coca-Cola

1-1/2 teaspoons vanilla

2-1/4 cup raw carrots, grated

1 cup nuts, chopped

1 cup coconut, flaked

Ingredients for Coca Cola Syrup

3/4 cup sugar

2 teaspoon cocoa

6 tablespoons Coca-Cola

6 tablespoons butter

1 tablespoon light corn syrup

1/2 teaspoon vanilla

Directions:

Preheat oven to 350 degrees.

Mix dry ingredients; set aside. Beat eggs well; add sugar, oil, cola and vanilla and beat well. Stir in dry ingredients until smooth, and then add carrots, nuts and coconut.

Bake in a greased and lightly floured 9-by-13-inch pan at 350 degrees for 40-50 minutes, until cake tests done.

To make syrup: Combine sugar, cocoa, cola, butter and corn syrup in saucepan; bring to a boil over medium heat, stirring constantly. Boil, stirring, until thick and syrupy, about 5 minutes. Add vanilla.

Remove cake from oven and prick exterior of hot cake with a fork, then pour cola syrup evenly over the top. Serve warm or at room temperature with whipped cream.
