Gluten-Free Food Review: Granola Bars by Bakery on Main

It is always a bit of a gamble when you try a food that is new to you. Will it taste good? Will you like it? Or, will it be a waste of money? If you just learned that you have a gluten-allergy, then you are in for a “food adventure” for a while. Here is my review of the gluten-free Peanut Butter Chocolate Granola Bars made by Bakery on Main. It is pretty difficult to find a granola bar that doesn’t include wheat, or some other ingredient that has gluten in it. This is unfortunate, because granola bars are … Continue reading

Corn Bake

Since I’ve been on a bit of vegetable theme lately on this blog, I thought I’d share another one with you that is a particular favorite. Aside from tasting great, part of the attraction is once you’ve got the chopping and grating done, this is so simple it doesn’t take much time to make. Good for the busy cook. Although this recipe uses vegetables, it also includes bacon, so sorry, if you’re vegetarian you’ll have to pass on this one. In my opinion, it loses too much in taste if you omit the bacon. Sorry too, it won’t work for … Continue reading

Beef and Pasta Bake

This beef and gluten free pasta dish is so simple and yet it tastes great. Our family prefers this to traditional lasagna made with lasagna sheets. Sorry, but because of the cheese content, this is not suitable for those unable to eat dairy products. HINT Any dish that uses ground beef should always include grated carrot or apple. It adds to the flavor. It’s all a matter of taste but in the efforts of cutting down salt intake I rarely add salt to most recipes, especially if using tomato paste. It is usually salty enough. No-one’s ever noticed or complained. … Continue reading

Something Corny and Something Fishy

This recipe is one that is a gluten free adaptation of a recipe given to my mother years ago. It has been a favorite in our family ever since and works equally well hot with vegetables or cold. It is something we often take as a picnic food or to the football. Another advantage is it is inexpensive to make. My son-in-law told me he couldn’t make up his mind whether he’d like Cornies or my quiche for his picnic birthday lunch. I made both. He was doubly happy. Cornies Ingredients 1 and a half pound gluten free sausage mince … Continue reading

Christmas Cookie Bake-a-thon

It’s a blizzard out there! Seriously. A genuine, meteorologically categorized blizzard. Schools are closed, major highways are shut down, and frankly, I’m surprised that we still have power. It’s my first official blizzard and I don’t know who’s more excited about staying home all day, Mommy or the kid. The National Weather Service warned about the impending 18 inches of snow and 50 mph winds, so I prepared. I stocked up on all the essentials needed to turn today’s blizzard into a Christmas cookie-baking marathon. Here are just a couple of the holiday treats my daughter and I will be … Continue reading

Comfort Foods: Baked Goods

Maybe it’s because of the chocolate factor, or perhaps it’s because I grew up eating them as a child and they always brought a smile to my face, either way the following recipes are some of my favorite comfort foods. What’s more, these simple timeless treats are now embraced by my daughter, which makes them twice as nice to prepare and enjoy. BANANA CHOCOLATE CHIP MUFFIN TOPS Ingredients: 1 1/2 cups flour 1 1/4 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 cup unsweetened applesauce 1/4 cup oatmeal 2 eggs 2 mashed bananas 1/2 cup white … Continue reading

Seasonal Recipes for Acorn and Butternut Squash

If you are looking for an affordable way to get into the spirit of the fall season consider purchasing some acorn or butternut squash. For the past two weeks my local market has drastically reduced the prices of its squash and by the looks of the containers, which continue to overflow with the orange and yellow produce, not very many people are interested in taking advantage of the deal. If you are not used to cooking with acorn or butternut squash the following recipes might provide the incentive you need to get over your apprehension. The first recipe is as … Continue reading
