Crockpot Chicken-A-Roni

Here is a nice warm meal that really puts your crockpot to work. I use it because, while my husband loves those "roni" type prepared food packages, I could do without all of the extra sodium, the extra preservatives (some with MSG) and the extra price attached to those things.

By creating my own version in the crockpot, I can preserve the creaminess, taste and texture he loves about the "ronis," while still keeping it healthy. And truth be told, preparing it all in the crockpot just couldn't be easier.

For this meal, I did a side dish of buttered broccoli, but feel free to add any green veggie. Broccoli is just always my go-to veggie, since everyone in my family will eat it.

I would estimate that this recipe makes about eight adult servings.

INGREDIENTS:

  • 2 cans of cream of mushroom soup
  • 1-1/2 cups of whole milk
  • 1 cup of water
  • 1-1/2 cups of uncooked white rice
  • 1 package or 6 and 3/4 teaspoons of onion soup mix (I buy in bulk, hence the teaspoon measure)
  • 6 boneless, skinless chicken breasts
  • 6 tablespoons of butter
  • Salt
  • Pepper
  • Grated parmesan cheese

DIRECTIONS:

  1. Spray a light coating of cooking spray in your crockpot for easy cleanup.
  2. In a large bowl, mix together all of the ingredients with the exception of the butter, the grated parmesan cheese and the chicken. We will call this the soup mixture.
  3. Place the chicken breasts in the crockpot. I use my larger oval crockpot so my chicken can lay flat, but there will still be enough room in a smaller round crockpot if you layer the chicken.
  4. Cut the butter into six pats and place one pat on each breast.
  5. Pour the soup mixture on top of the chicken.
  6. Add salt and pepper on top to your taste.
  7. Add the grated parmesan cheese on top.
  8. Cook on low for 8 hours
