Unique Easter Desserts

Growing up my mom would make the same dessert for Easter. Year after year after year she would bake a yellow cake in the shape of a bunny or an Easter basket, cover it with white frosting, then douse it with toasted coconut flakes. She stopped making the cake when I was in junior high, right after I was diagnosed with a coconut allergy. These days we diversify when making desserts to celebrate the Easter holiday. In addition to having at least a couple chocolate desserts (what’s Easter without chocolate, right?), we also make sure the buffet table contains a … Continue reading

Easter Sunday Dinner Ideas: Lamb

Our family’s Easter dinners typically consist of ham or prime rib, but this year I am feeling a bit bold and am considering making lamb. Ordinarily, big holiday gatherings are not when you want to experiment with dishes (especially main entrees) that are not embraced by all of your guests. However, lamb is a traditional Easter entrée and if you prepare it on a regular basis (and your family members enjoy eating it) then you might be interested in this next recipe. I found it in my mom’s recipe box when I was home visiting a couple of weeks ago. … Continue reading

In Case of Bad Weather – Inside Easter Egg Hunts

Here in Colorado, we never know what kind of weather Easter will bring. We’ve had some gorgeous Easters where we hunted for eggs outside in short sleeved shirts and sundresses. We’ve also had a lot of Easters where we had more than a few inches of snow. Most of the time we put on our coats and snow boots and go outside anyway, and joke that it would have been harder to find the eggs if we’d left them white! During one snowy Easter we found out that dyed eggs leave a little bit of color behind in the snow. … Continue reading

Church-Going Cherub

The week before Easter brings a marathon of church-going for Christians. There’s church Maundy Thursday, with communion; church Good Friday; and a variety of Sunday-morning services to celebrate Easter. Since I was a child, I’ve attended church Thursday, Friday, and gone to one service on Sunday morning – the Easter Sunrise Service. Yep, we got up, put on our Sunday finest, and drove (sometimes walked) off to a service that started at 6:00am. We’d sit in church, singing hymns, listening to the joyful Easter sermon, and catching whiffs of the delicious Easter Breakfast aromas floating up from the church kitchen. … Continue reading
