Easy and Affordable Mother's Day Brunch Recipesby Michele Cheplic | More from this Blogger 08 May 2009 05:43 AM Moms are priceless, but most would balk if their children spent all their savings purchasing them expensive gifts for Mother's Day. If you are looking for an affordable way to show mom how much you love her, then consider making these simple recipes to include in a memorable Mom's Day breakfast in bed or family brunch. FANCY EGGS AND HAM Ingredients: 1 package (10-ounce) Pepperidge Farm puff pastry shells 6 tablespoons butter, divided 2 tablespoons flour 2 cups whole milk 1 1/2 cups shredded sharp cheddar cheese 1/4 cup heavy cream Dash hot sauce 1/2 teaspoon Dijon mustard 6 eggs 1/4 cup water Salt and pepper 6 slices thin deli ham, warmed 2 tablespoons chopped fresh chives Directions: Bake pastry shells according to package directions. Heat 4 tablespoons butter in saucepan over medium heat. Add flour and stir until smooth, about 1 minute. Stir in 1 cup milk. Cook and stir until mixture bubbles and thickens, about 2 minutes. Gradually stir in cheeses, hot sauce, mustard and cream. Stir until smooth. Keep sauce warm while you beat eggs and water in a bowl. Season with salt and pepper. Heat remaining butter in skillet. Add eggs. Cook and stir until eggs are light and fluffy, about 2 minutes. Split pastry shells in half. Top each with 2 slices of ham and eggs. Pour cheese sauce on top. Garnish with fresh chives. COFFEE CAKE Ingredients for Coffee Cake: 1/4 cup butter 1/3 cup white sugar 1 egg 1/2 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1/4 teaspoon salt 2 teaspoons baking powder 2/3 cup milk Ingredients for Topping: 4 tablespoons all-purpose flour 4 tablespoons cold butter 5 tablespoons white sugar 4 tablespoons brown sugar 1 teaspoon ground cinnamon Directions: Preheat the oven to 375 degrees. In a large bowl, beat together 1/4 cup butter and 1/3 cup of sugar until smooth. Beat in egg and vanilla until well blended. Combine 1 1/2 cups of flour, salt and baking powder; stir into the creamed mixture alternately with the milk. Spread mixture evenly into a 9x9-inch baking pan. In a small bowl mix topping ingredients, then sprinkle over the top of the coffee cake. Bake for 25 minutes or until a knife inserted into the center comes out clean.
