Budget Recipes – Bacon, Lettuce, and Tomato Sandwiches

There is something uniquely satisfying about a great sandwich. Typically, sandwiches are made for lunch, but they can also be a quick and tasty dinner. It is pretty easy to stay within your budget by serving a meal of sandwiches, and you can choose to add fresh veggies to them. One of my favorite sandwiches is a BLT. Bacon isn’t just for breakfast anymore! It also makes an excellent addition to a salad or a sandwich. Bacon is a food that even the pickiest of eaters will decide to eat. You can’t go wrong with bacon. This week, Albertson’s has … Continue reading

Freezer Cooking Egg Muffin Sandwiches

Don’t you just love having different things on hand for breakfast? Cereal can be the standard for most busy families in the morning, but cereal can get pretty expensive. Plus, sometimes it is nice to have a good hot breakfast. One of our favorite things to eat on the go are breakfast sandwiches, you know the ones made on English muffins? Well, most people who eat these either stop off at the diner or fast food restaurant, or they buy those frozen ones that you can microwave. Again, these things get expensive. So, why not make and freeze our own? … Continue reading

More Egg-cellent Egg Recipes

You can tell Easter is right around the corner because area supermarkets are running specials on eggs. I’m not planning to color eggs this week (though I know some schools and civic organizations are sponsoring egg hunts this weekend), but I couldn’t pass up the deal and purchased a couple dozen. I am now in the process of organizing my egg recipes so I can put these protein rich ovals to good use. If you too are looking for simple yet tasty ways to incorporate incredible, edible eggs into your menu, consider the following: SPRING VEGETABLE OMELET Ingredients: 2 tablespoons … Continue reading

That’s a Wrap… for Turkey and Veggies

July is more than half way over and for most moms the dog days of summer were supposed to bring with them a break from the chaos that comes from chauffeuring kids from school to soccer, piano lessons, karate, and dance. But if your life is anything like mine then you have likely found that summer’s hot and humid days just mean you have shifted your schedule to accommodate swimming, t-ball, golf and playdates. But relief is on the way. If your days of dining on the run are far from over then you might find the following recipes quite … Continue reading

Summer Picnic Food—Meaty Italian Sandwiches and Three-Cheese Pasta Salad

Nothing says summer than a picnic in the park. With the Fourth of July holiday right around the corner millions of flag waving families will be trekking to local parks to view the annual fireworks displays. And with space at a premium most will be securing their spots from the early morning, which means packing a lot of food to keep the kids occupied until the big bang goes off at dusk. The following recipes are ideal picnic dishes as neither contains mayonnaise, which tends to spoil when left out in the hot sun too long. The first recipe for … Continue reading

Three-Cheese Cheese Puffs and Cranberry Cracker Spread

Potlucks provide the perfect opportunity to try foods you wouldn’t ordinarily make for your own family. And if you have children a potluck is the perfect place for you to discover new ways to incorporate your kids’ favorite ingredients into daily dishes. In a previous blog I wrote about a football potluck I attended over the weekend. My daughter didn’t come, but she devoured the goodies I brought home for her. Her favorite was a simple cheesy biscuit. I make plain biscuits at home all the time and she eats them without complaint, but I have never seen her inhale … Continue reading

Homemade Ice Cream Sandwiches

There is nothing that ‘screams’ summer more to me than ice cream sandwiches. For some reason this year, I have returned to the kitchen to make more frozen goodies and treats. (I’m sure that it has to do with the twins being older now.) In any case, this is next on our ‘to try’ list of recipes. Is it worth it to make your own ice cream sandwiches? Um. . .YES!!! You can customize it anyway you want by filling your brownie with your choice of ice cream, running the sides through coconut or even adding ice cream topping to … Continue reading

Ideas for Using Leftover Easter Eggs

Don’t throw your money away by letting your Easter eggs go to waste! Being frugal means conserving what you have and reusing what you can. Here are some great ways to use up both the Easter eggs and the shells. Every year around Easter time, my kids get so excited at the idea of decorating Easter eggs. If it were up to them they would decorate at least three or four dozen eggs before they got tired. Normally I try to restrict them to about 12 to 18 eggs. After all, there are just so many hard boiled eggs I … Continue reading

Deviled Eggs and Egg Salad

Come Monday, you’ll have a refrigerator full of Easter Eggs that need to be used up in a couple of days. (See Easter Egg Safety Blog). Nothing beats deviled eggs or a good egg salad sandwich for excellent use of leftover hard boiled eggs. Here are my favorite recipes for both. (Note: I used reduced-fat mayonnaise in both of these recipes and no one ever notices. When I’m making the egg salad for myself, I only use half the yolks) Deviled Eggs 6 hard-boiled eggs 2 Tablespoons finely chopped onion 1/4 cup mayonnaise 1 Tablespoon yellow mustard Salt and pepper … Continue reading
