Friday Fish Favorites

You know Good Friday is right around the corner when your local fishmonger is offering incredible deals on fresh seafood. I just got back from the market and it was filled with people purchasing ingredients for their Friday fish fry (or bakes, or grills, etc.). And here I thought there would be a run on Easter hams and lamb. First things first, I suppose. In any event, I thought I would share the fish recipe I am planning to prepare this Friday and one that my mother used to prepare when I was growing up in Hawaii. Both are extremely … Continue reading

Recipes for Fish Fridays

With Good Friday just a few days away I figured this was a good time to post the following seafood recipes. Granted, it might have been more appropriate to post them at the beginning of Lent, but for those who abstain from meat on the Fridays leading up to Easter Sunday (or on all Fridays) these recipes can still be employed this week… and beyond. Both recipes don’t require a slew of ingredients or a lot of prep time to yield a delicious and extremely healthy seafood meal. Please note that the scallop recipe does call for strips of bacon, … Continue reading

Weeknight Menu: Ranchy Breaded Fish and Candied Acorn Squash

Awhile ago, I started a feature in the food blog to help harried moms and wives put together complete meals on super busy weeknights. And then the feature gradually gave way to more festive holiday foods. However, I’ve been reminded that we are busier than ever and need all the help we can get to maintain normal evening routines. Add a salad to this simple meal and you have a complete and nutritious meal. . .on the table in less than 30 minutes! You will need: 3/4 cup Italian seasoned bread crumbs 1 (1 ounce) package dry Ranch-style dressing mix … Continue reading

Fabulously Simple Fish Recipes

In my last blog I detailed the health benefits associated with a diet that included at least a couple of servings of fish per week. I realize that there are many people who rarely if ever opt to cook fish for their families. But, as I mentioned earlier, I grew up on an island surrounded by water. Consequently, it was not at all unusual for our family (along with most families in Hawaii) to eat fish for breakfast (mahi mahi and eggs), lunch (fish tacos) and dinner (poached or grilled fish fillets). Some call Hawaii the Napa Valley of the … Continue reading

Why You Should Eat More Fish

I was born and raised in Hawaii so it stands to reason that I love to eat fish. What doesn’t make sense is that I am allergic to shrimp, pineapple, and coconut. But, that’s another blog. If you are looking for a simple way to inject your diet with a healthy shot of nutrients feast your eyes on fish. Fish are not only low in calories and fat, but they are also a great source of omega-3 fatty acids, fat, doctors say most Americans don’t get enough of. Health experts recommend eating at least two servings of fish each week … Continue reading

Devilishly Delectable Halloween Treats

What’s Halloween without a few bloody fingers? Bloody finger cookies, that is. If you want to make your Halloween buffet as gory as possible you might consider adding the recipe to your collection. Then, round out the spread by adding a few tamer selections for the faint of heart such as Halloween Orange Potion, a liquid refreshment featuring the colors of the season and traditional Halloween Snack Mix, a tasty and festive treat that guests can munch on by the handful. Each recipe makes for devilishly good eats at a Halloween bash. BLOODY FINGER COOKIES Ingredients: 1 cup butter, softened … Continue reading

Scallops for Your Non-Traditional Thanksgiving Dinner

I have been saving my blog about scallops for a holiday. Why? Because properly prepared scallops are great for entertaining. They are very versatile and can go as an appetizer or as the main course. I figure surely someone out there doesn’t like turkey–right? I suppose if you are already committed to the big bird, you can just save this for later. Breaded Parmesan Scallops This is my absolute favorite way to prepare scallops. I recommend buying smaller scallops for this dish as I think it’s easier to determine when they’re done. I prefer to saute them but you can … Continue reading

Enjoy Seafood and Lose Weight!

I grew up in Maine so I’ve always loved seafood. I can live without fish sticks but put some shrimp scampi in front of me and it is all over! Well, if you are anything like me, you now have a new reason to eat seafood. Not only is it high in protein, low in fat and quite tasty but it can help you lose weight too! A recently published study in the International Journal of Obesity found that young adult men who ate a low-calorie diet that included fish had slightly more weight loss than a similar diet without … Continue reading

Feel the Love Day: How I’m Celebrating

September 7th is Feel the Love Day. It also happens to be my husband’s birthday. Naturally Wayne’s important to me and a birthday is prime time for making him feel loved. But this year I’m actually under the gun to show the love. Last year I didn’t do very good when it came to his birthday. He definitely wasn’t feeling the love. I don’t exactly remember why I was less than stellar last year when it came to celebrating Wayne’s birthday, but I remember I was. And what made it worse was Wayne has the worst luck when it comes … Continue reading
