What Are Your Baby’s Favorites?

They say that every baby is born with a unique and distinct personality. After having 3 babies myself, I can definitely say that is true. One of the fun things about this stage that my baby is in is that we see more of his personality a little bit each day. I love it. Along with a personality comes a baby’s likes and dislikes, and believe it or not, babies even have “favorites” at this stage. Of course, as baby grows, his favorite things will grow and change too. But, sometimes, they will stay the same. What is your baby’s … Continue reading

Family Favorite: Broccoli Cheese Soup

If I ever want my kids to eat their broccoli, I just cook it up into this soup! While this is not exactly a diet recipe, since it is a cream soup, it still packs a lot of nutrition in it. Paired with a crusty bread, it makes a hearty meal that keeps everyone satisfied in the winter months. Because this is a cream soup, I would not recommend freezing it. We usually don’t have any leftover to freeze anyway. It will stay nicely in the fridge for up to three days. Reheat it to warm on the stovetop for … Continue reading

My Favorite Meal of the Day

With pregnancy came the necessity to increase my protein intake by more than double of what I would normally get in a day. In order to meet my protein quota I would eat two eggs for breakfast every single morning. At first I ate two fried eggs over medium with a piece of toast, but once morning sickness kicked in, I developed an aversion to toast (and I could not eat over medium eggs without toast). Because of my busy and early morning schedule, I would have two eggs scrambled. At about twelve weeks my midwife told be that I … Continue reading

Great Potatoes

Not everyone likes rice. I have a friend who doesn’t consider a meal finished unless it contains potatoes in some form. But potatoes can get boring so here are a couple different ways to use the humble spud, as we call potatoes in Australia. Indian Potatoes These are great served as part of a curry meal instead of rice and will keep people like my friend happy. HINT Make sure if you use fresh chilies, you wear disposable gloves and throw them straight out afterwards. We keep a pack of disposable gloves in the panty just for chilies. Ingredients Quarter … Continue reading

Crock-Pot Favorites

I’m back from Hawaii where I was able to gorge on my mom’s homemade meals. Fresh fish, tropical fruits and awesome ethnic favorites made their way into my mouth in large quantities. Now, it’s back to reality: Freezing cold temperatures, brutal wind chills and my overworked crock-pot. My slow cooker works overtime during the winter months, and while I long for my favorite Island-inspired dishes, I must say, my crock-pot delivers some tasty dishes with little help on my part. I love being able to cut up ingredients, stick them into the crock-pot, get on with the day, and return … Continue reading

Favorite Potatoes

One thing writing for the food blog has done, it has got me looking back at recipes I haven’t used for a long while. That’s the thing when you cook every day you can become lazy and forget about trying new things or even resorting to old recipes but tend to stick with the same old thing. One such recipe I rediscovered when writing this blog was Pimento Chicken. When I typed it out for the blog I immediately thought, it used to be such a favorite with my husband and with guests. So guess what we had for dinner … Continue reading

Holiday Rib Roast and Loaded Potatoes

In my family the holidays bring multiple generations into the kitchen. Like many clans, we have a handful of favorite holiday dishes that are made without fail each year. Pistachio-Crusted Rib Roast and Loaded Baked Potatoes are among my family’s favorite Christmas recipes. While the dishes may sound fancy, they are surprisingly simple to make. Follow the recipes carefully and you too can celebrate the holidays with these scrumptious seasonal eats: PISTACHIO-CRUSTED RIB ROAST Ingredients: 1 beef rib roast (2 to 4 ribs), small end, back bone removed (6 to 8 pounds) 1/2 cup unsalted shelled pistachios, finely chopped 1/4 … Continue reading

Crockpot Mashed Potatoes

If you want an extra creamy version of mashed potatoes that is easy to fix, you might want to consider this recipe. Rich and hearty, this mashed potatoes recipe yields a dish that is decadent like a rich savory dish instead of fluffy. For a long time, this was the only mashed potato recipe I prepared during the holidays, because it was requested so often, and it was easily portable. Make sure to stir the edges of your pot at least once, to avoid browning. You can prepare these mashed potatoes in advance, but you’ll get best results when you … Continue reading

Basic Mashed Potatoes

What are the holidays without mashed potatoes? I personally think that mashed potatoes are the ultimate comfort food. Done right, you may find yourself tasting just a few too many times as you are mashing them, because they are so delicious. Start with a basic mashed potato recipe, and then make it your own. This recipe makes five pounds of mashed potatoes, which should be plenty for a family holiday gathering. This recipe also freezes well, so feel free to store half away for a hectic holiday season weekday. I like to freeze leftovers in muffin cups and then once … Continue reading
