Fine Dining for Camping: Hot Dog Kabobs

campfireThere's something about roasting stuff on a stick over a fire that's just plain fun. There's a certain kid appeal and although I have to admit that my children don't always like the burnt stuff, they at least like the roasting. There were a couple different versions of hotdog kabobs that we tried while on our recent camping trip but these were our favorites!

Hotdog and String Cheese Kabobs

Buy cans of biscuit dough, string cheese, and jumbo sized beef hotdogs. Cut the hotdogs and string cheese up so that you can put them on a stick. However, before you put anything on your skewer, wrap the string cheese pieces in biscuit dough. Then alternately put hotdog pieces and cheese pieces onto your stick and roast away until the dough is brown. (Hint: Make sure you don't wrap the dough too thickly around the cheese. Otherwise the dough will burn on the outside but be gooey in the middle.)

Hotdog and Fries on a Stick

For this you will need to buy the thickest fries you can find. You also may find it helpful to wrap the stick in foil before roasting. We actually had a grate that would catch stray pieces of fries if needed. Here's a hint though--tater tots will fall apart!

Cut up the hotdog and alternate on the stick with the fries. Roast until the potatoes are tender. To check to see when the potatoes are tender, remove your stick from the fire and check the potatoes with a toothpick.

Kielbasa Kabobs

Just because your kids are enjoying the joys of roasting hotdogs, doesn't mean you're relegated to eat kid food too! To do this, buy some kielbasa and cut it up in pieces for your roasting stick. We alternated our kielbasa with squash and potatoes, but you can pick another hearty vegetable. Things like onions and peppers and even mushrooms need to be roasted separately.

Remember a little planning goes a long way on a camping trip. Everyone will be much happier if you can do as much of the food prep as is possible. Just because your camping doesn't mean you can't eat gourmet!
