It is also the time of year that we honor the special ladies in our lives who have spent countless hours slaving over hot stoves to get dinner on the table. So what better time to say thank you then by firing up the grill and whipping up a simple (yet delicious) meal for M-O-M. For the past few days I have been guest blogging in FOOD with the hopes of inspiring semi-regular cooks to get in the kitchen and let their culinary skills take over. For this grill blog I dug deep into my recipe box and found two simple, affordable and tasty treats that no mom could resist. And given that both dishes can be cooked up outdoors (which means you cut down on the number of dirty dishes) there's no excuse not to grab an apron while mom takes the day off from kitchen duties. SUCCULENT SALMON BURGERS WITH DILL SAUCE Ingredients for Dill Sauce: 1 cup mayonnaise 1/2 cup sour cream 3 tablespoons fresh chopped dill 1 tablespoon capers 1 tablespoon finely chopped dill pickles 2 teaspoons dill pickle juice 1 teaspoon fresh lemon juice Directions: Whisk together and refrigerate for at least an hour. Ingredients for Salmon Burgers: 1 16oz. can pink salmon 1/2 cup finely chopped green onion 1/2 cup finely chopped celery 2 tablespoon fresh flat leaf parsley 1/2 cup diced bread crumbs 2 large eggs, lightly beaten 1 tablespoon Dijon mustard 2 teaspoons fresh lemon juice 1 teaspoon grated lemon rind Directions: Combine all ingredients and mix well. Form into four burger patties. Refrigerate patties for at least one hour and remove right before you are ready to cook. Place patties on a medium hot grill. (If you are cooking indoors place patties in a lightly greased skillet over medium-high heat.) Cook for 2 to 3 minutes on each side or until lightly browned. Remove patties from grill and serve on buns with lettuce, tomato and dill sauce. ABC BURGERS Ingredients for Avocado, Bacon Cheeseburgers: 2 Pounds lean ground beef 6 slices pepper jack or American cheese 2 onions, sliced 2 tomatoes, sliced 12 pieces cooked bacon 2 to 3 avocados, seeded, peeled and mashed Lettuce leaves 1 ½ teaspoon Worcestershire sauce 1 ½ teaspoon salt ¾ teaspoon pepper 6 sesame seed burger buns Directions: Combine Worcestershire, salt and pepper with the ground beef. Shape into six patties. Place on grill and cook until desired doneness. Top with cheese. Place burgers on buns and top with lettuce, sliced tomatoes, bacon and onion. Then add mashed avocado before placing top bun on burger.
