Gluten Free: Sweet Potato Soft Tacosby Valorie Delp | More from this Blogger 30 Mar 2008 03:21 PM In my hunt for gluten free recipes, I've discovered a variety of sometimes bizarre and sometimes very creative ways to get around the gluten that seems to lurk in every nook and cranny of our food. This recipe is inspired by another one that I found at the Gluten Free Cooking School. It blends sweet and spicy together, and makes a delightful vegetarian meal. I also tried this as a wrap. While putting it in a wrap generally means that the dish is no longer gluten free, it would still make good vegetarian fare. I hope you enjoy the combination of tart sweetness and spiciness as much as we did. This is definitely a surprising combination of ingredients that yields a delicious and filling meal. You will need: 4 medium sweet potatoes; boiled, peeled and diced 1 onion finely chopped 1 can of black beans, drained 1 jar of salsa. . .as spicy as you'd like (we used medium) 1 apple, peeled, cored and finely diced 1 avocado, peeled and diced 1 packet of guacomole seasoning Romaine lettuce corn tortillas Directions: 1. In a saute pan, saute onions until soft. Add the apple, black beans, salsa, avocado and cook until heated through. Add the seasoning and stir well. Mixture is done when onions are clear and beans are soft. 2. Add the potatoes, stirring carefully so you don't accidentally mash them. (Or if you prefer--go ahead and mash them!) Keep warm on low setting. 3. Once everything is heated through, spread on a warmed corn tortilla, top with lettuce and enjoy! (We love sour cream on this as well!) To warm corn tortillas the way the tortilleria does it: There is an art to warming tortillas that will yield warm tortillas without making them crumble. The way Hispanic families do it (or at least in Mexico) is to use the "cornal." It's a flat disk, kind of like a griddle that goes on the stove. You can also heat them right on your electric stove element. You heat them for a few minutes on each side and you should have delicious warmed corn tortillas. Never heat them in a microwave.
