Grilled Artichokes

My kids and I love artichokes (the hubby is not a fan so we hog out on them when he is out of town), and by far they are best when they are grilled. Here's how I like to prepare them, grilled on a barbecue. If you don't want to break out the grill, you can get the same effect with a good frying pan, although you won't get that smoky barbecue flavor. A cast-iron skillet is best, but I've also used my pancake griddle.
Cut the stem off the artichoke, then cut artichoke in half. Cut out the furry part in the middle of each half. Wash them thoroughly. Trim the outside leaves to take off the spiny tops. Sprinkle lemon juice on the artichoke so it won't turn brown.
Boil the halves for 10 - 15 minutes in a large pot of boiling water until they are tender in the middle. (I poke them with a fork to test for doneness.)
Drain the artichokes and place them cut-side up on a plate. Place butter and some minced garlic in a bowl in the microwave. Microwave until the butter is just melted. Pour the butter and garlic over the artichokes.
Grill the artichokes on all sides until they are slightly charred all around. Serve with a little extra melted butter.
Here is a simple recipe for a grilling/dipping sauce if you don't want to use butter:
1/2 cup olive oil
2 cloves minced garlic
1 teaspoon salt
1/2 teaspoon ground black pepper
Blend all the ingredients together. Brush over artichokes before grilling, and then use as a dipping sauce.
