This means I am less likely to want to turn on the stove, so what do I do? Look for great salad recipes online! Not only can you avoid heating up the kitchen, most of the salad recipes I find are also good for you too. Here is one of my favorites I found online - Grilled Shrimp Salad. For this recipe, you will need lemon juice, frozen orange juice concentrate, soy sauce, honey, 2 pounds of large, peeled shrimp, 2 fresh tomatoes, fresh cilantro, one 14 ounce can of black beans, frozen corn, olive oil, ground cumin, and butter lettuce. Combine 1/4 cup of lemon juice, 1/4 cup of thawed orange juice concentrate, 3 tablespoons of soy sauce, and 2 tablespoons of honey then pour in a large zip lock bag. Add your 2 pounds of shrimp to the bag and toss to coat. Place the bag in the refrigerator for exactly one hour. Chop two cups of fresh tomatoes and 1/4 cup of fresh cilantro. Add both of these ingredients to a medium sized bowl, then add the 14 ounce can of black beans (drained) and two cups of thawed corn and stir. In a smaller bowl, combine 1/4 cup of lemon juice, 2 tablespoons of olive oil, 1/2 teaspoon of ground cumin, 1/2 teaspoon of salt, and 1/8 teaspoon of pepper. Using a whisk, combine these ingredients then pour them over the tomato mixture. Cover and refrigerate. Spray both sides of a George Foreman type grill with non-stick cooking spray and preheat. Remove your shrimp from the bag and grill for 1-2 minutes until the shrimp are done. Rinse lettuce and place leaves on a platter. To that, add the tomato mixture then top with shrimp.
