Have Fun with Cupcakesby Michele Cheplic | More from this Blogger 26 Apr 2009 03:05 PM As we enter the last month of school, it seems like everyday is treat day. Goodies for Earth Day, treats for Spring Fling, snacks for May Day... it's never ending. But instead of sending your child to school or daycare with plain sugar cookies or boring banana bread, consider adding a special touch to traditional cupcakes. Let your children's imaginations run wild with these fun cupcake recipes: MONKEY CUPCAKES Ingredients: 1 package chocolate cake mix 1 can chocolate frosting 24 Nilla wafers Brown decorating gel Red decorating gel 48 blue M&M's 12 Nutter Butter cookies Directions: Prepare cake batter according to package directions for cupcakes. Bake, then allow to cool on wire racks. Set aside 1/4 cup frosting. Frost cupcakes with remaining frosting. With a serrated knife, cut off one-forth of each Nilla wafer. To make the face, place wafer on each cupcake with the rounded edge of wafer near edge of cupcake. Add dots of brown gel for nostrils. Use red gel to pipe a mouth on each cupcake. Place M&M's above the wafer for eyes, and add dots of brown gel for pupils. Use remaining frosting and a butter knife to put on hair. Carefully separate Nutter Butter cookies. Cut each in half. Put one on each side of cupcake for ears, rounded edge out. Makes 24 cupcakes. BABY CUPCAKES Ingredients: 1 box cake mix (your favorite flavor) Water, oil, eggs as directed on cake mix 1 container vanilla frosting Red food coloring 1 cup semisweet chocolate chips 48 additional chocolate chips Plastic baby pacifiers (buy the cheapest ones available) Directions: Bake 24 cupcakes as directed on cake mix box. Let cook completely. Color frosting by adding one drop of red food color at a time until you get a flesh color. Place 1 cup of chocolate chips in Ziploc bag. Heat in microwave until melted, squeezing between fingers until smooth. Cut the bottom corner of the bag, making sure hole is very small. On piece of wax paper, draw 24 curls for the top of the babies' heads. Place in refrigerator to set. Frost cupcakes. Use two chocolate chips for eyes, put a chocolate curl on top of face and stick pacifier where mouth would be. Great to serve at baby showers or as a daycare treat.
