Hot Chicken Salad and Fresh Green Bean and Tomato Saladby Libby Pelham | More from this Blogger 17 Mar 2006 03:07 PM These recipes are from Paula Deen's show, Home Cooking. I saw them on two separate shows, but decided to combine them together because they both sound so scrumptious! Fresh Green Bean and Tomato Salad For your salad, you will need 1/2 pound of fresh green beans, 1/2 cup of fresh or frozen green peas, 2 fresh tomatoes, eggs, 1 can of water chestnuts, green onions, mayonnaise, lemon juice, and a head of romaine or red leaf lettuce. Trim your green beans and seed and quarter your tomatoes. Hard boil two eggs and cut them into quarters. Slice two or three green onions. In a large pot, blanch your beans in boiling, salted water for about 5 minutes. Remove and place in ice water to stop the cooking then drain. In the same pot, blanch the green peas about 30 seconds to a minute. Remove and place the peas in ice water then drain. Place beans, peas, tomatoes, eggs, water chestnuts (drained) and green onions in a large bowl. Season that with salt and pepper. Add 1/2 cup of mayonnaise and a dash of lemon juice and stir. Serve this mixture over your lettuce leaves. Hot Chicken Salad For this delicious recipe, you will need cooked chicken breast meat (cubed), celery, slivered almonds, lemon juice, mayonnaise, shredded sharp cheddar cheese, and potato chips. Preheat your oven to 350 degrees. Dice your celery. Cook and cube your chicken if needed. Combine 2 cups of cubed chicken breast, 1 cup of diced celery, 1/2 cup of slivered almonds, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, 2 tablespoons of lemon juice, 1 cup of mayonnaise, and 1 cup of shredded sharp cheddar cheese in a large bowl. Place the mixture in a greased 13 x 9 inch baking dish and top with 2/3 cup of crushed potato chips. Cook for 20 minutes then serve with your salad!
