How to Make Lollipop Cookies and Gourmet Chocolate Truffles

Everything tastes better on a stick, right? That's what state fair food vendors maintain anyway. Now you can bring the joy of snacking on a stick to your holiday party with this fun recipe for Chocolate Lollipop Cookies. Don't let the name intimidate you, this recipe is very simple to make. What's more, kids go crazy for these festive holiday cookies.

The second recipe for Gourmet Chocolate Truffles is not as elaborate as it sounds. The chocolate treats that are mega-popular this time of year have the look and taste of a gourmet goodie, but the preparation is nowhere near as fancy.

CHOCOLATE LOLLIPOP COOKIES

Ingredients:

2/3 cup butter or margarine, softened

1-1/4 cups granulated sugar

1 tablespoon water

1 teaspoon vanilla extract

1 egg

1-1/2 cups all-purpose flour

1/2 cup cocoa (I use Hershey's)

1/2 teaspoon salt

1/4 teaspoon baking soda

12 wooden Popsicle sticks

White frosting

Sprinkles

Directions:

Heat oven to 350 degrees.

Beat butter, sugar, water and vanilla in large bowl on medium speed of mixer until well blended. Add egg; beat well.

Stir together flour, cocoa, salt and baking soda. Gradually add to sugar mixture, beating on low speed just until blended.

Roll 1/4-cup dough into ball; place on ungreased cookie sheet, 3 cookies per sheet.

Insert wooden Popsicle stick about three quarters of the way into side of each ball. Flatten slightly.

Bake 12 to 15 minutes.

Cool several minutes on cookie sheet; remove to wire rack. Cool completely.

Decorate top of cookie with white frosting and sprinkles.

Makes about 12 cookies.

GOURMET CHOCOLATE TRUFFLES

Ingredients:

1 cup heavy cream

14 oz. Dark Chocolate (use very high quality, 70% cocoa)

8 oz. Additional Dark Chocolate

1 1/2 cups Cocoa Powder (the highest quality you can find)

Directions:

Break chocolate into small pieces and put in a large bowl.

Bring cream slowly to a light boil.

Pour boiling cream over chocolate and keep stirring until all the chocolate has melted.

Place chocolate in refrigerator.

When chilled remove and form into round balls and place on wax paper.

Melt the rest of the chocolate in a double boiler.

Dip each ball in the melted chocolate and then roll it in the cocoa powder.
