Gluten Free: Sweet Potato Soft Tacos

In my hunt for gluten free recipes, I’ve discovered a variety of sometimes bizarre and sometimes very creative ways to get around the gluten that seems to lurk in every nook and cranny of our food. It all started with an innocent question in my inbox: Valorie–I have a friend who has a teenaged son who has to have a gluten free diet. Do you have any teen friendly recipes for that?
