Does Your Toddler Boss You Around?

Today was an interesting day, as are most days with a toddler. From the moment that he woke up this morning until the time that he went to bed this evening, Dylan wanted everything to be a very specific way and he wanted it immediately. I did the best that I could to keep up with the stream of demands, but I seemed to always fall short or miss the mark. For example, at breakfast, I made another batch of mini – frittatas just for him because he would not touch the ones with vegetables in them. As they were … Continue reading

Organizing Your Kitchen When You Have a Special Diet

It’s official. You have an allergy. Your child has a food intolerance that’s causing eczema. Your nursing baby seems to be reacting to something in your diet. The logistics of moving to a new diet can seem overwhelming. I know, because I’ve been around that block a couple of times now, and I am sure there is more to come. In my late teens, I became very sensitive to milk and has to switch my diet around. Then I got type 1 diabetes, which made me rethink how I eat and made it essential to count the carbohydrates in every … Continue reading

Freezer Cooking: Don’t Give Up!

After spending several years on mailing lists, message boards and other resources for freezer cooking fanatics, I have seen it all. The most common thing I see, is people giving up too soon. Why? I have often wondered this myself. Why give up on something that will help so tremendously in the long run. Sometimes, I think people forget that, there you do not have to cook for an entire month, if you do not want to. Freezer Cooking can be done for a week at a time, or could be done once during a month and then not again … Continue reading

Is Your Cooking Fused?

Fusion cooking is a culinary technique that combines regional and ethnic techniques and ingredients in order to create new and innovative tastes. Tex Mex, Shish Kabobs, and California Rolls are all examples of fusion cooking. I have to be honest and say I’m not (or rather I wasn’t) sure what all the fuss is about. It seems to me that this has been going on for centuries. People move from homeland to new land. People cannot find same spices and/or ingredients. Ingenious, aforementioned people improvise creating a new dish that is similar but uses slightly different ingredients. Oh. . .but … Continue reading

What Do the Dates on Your Canned Foods Mean?

Are you unsure about how long a can of tuna will last? What do the stamps printed on the cans mean? Can the stamped dates tell you how long an item will store? Those codes sure can be confusing! Here are some things to keep in mind when storing canned foods: First, you may be able to get some information from the product codes printed on the cans, but not much. Cans that list a “use by” date or a “best if eaten by” mean more than random numbers or dates without labels. Other codes or dates printed on cans … Continue reading

Solve Your Child’s Eating Problems

There are many reasons why children with special needs may be picky eaters. Sensory Integration Disorder, which accompanies a wide spectrum of disabilities, may cause hypersensitivity to taste, textures, temperatures, and smell. Or, conversely, it may cause the lack of sensitivity to texture, taste, and smell, which can make eating a mundane, tedious task. Motor difficulties can prevent problems with chewing and swallowing. Or children with attention deficits can become too distracted to stay seated and finish eating. With my son Kyle, I encountered a strange issue with his eating habits. He absolutely loved apples, to the point that I … Continue reading

I Want My Mummy!

Where do mummies go for a swim? In the Dead Sea. Why couldn’t the mummy come outside? Because he was all wrapped up. What is a Mummy’s favorite type of music? Wrap. Why were ancient Egyptian children confused? Because their daddies were mummies. When you live with an 8-year-old, this is the type of entertainment you are treated to in the days leading up to Halloween. My daughter’s third grade class is celebrating the holiday with mummies, spiders and bats, and as a room mom, it’s my job to create party snacks to enhance the creepy theme. How am I … Continue reading

Preview of the Terrible Twos?

Lily will be 17 months old on May 2. Our friends always comment on how sweet and quiet she is, and, truthfully, she is a very sweet little girl who rarely causes trouble. However, yesterday she really decided to flex her toddler muscles. The morning started out OK. She ate oatmeal with butter and some blueberries. We’ve found this is the best method of hiding her laxative. Simply cut the pill into tiny pieces and embed them in the berries. From that point forward, however, she was a little devil. On Tuesdays and Thursdays, I take her to the library … Continue reading
