INGREDIENTS: 4 medium lamb chops 2 tbs olive oil 1/2 tsp salt, divided use 1/4 tsp ground black pepper, divided use 8 oz plain yogurt 1 medium lemon, juiced 1 tbs chopped fresh mint 1/4 tsp paprika DIRECTIONS: 1. Preheat broiler. 2. Brush lamb chops on both sides with olive oil and season with half the salt and half the pepper; place on a broiler pan. Broil for about 4 minutes per side for medium-rare. 3. Meanwhile mix together remaining salt and pepper, yogurt, lemon juice, mint and paprika; blend well. 4. Serve lamb chops drizzled with yogurt sauce.
