Adding Pizzazz to Ordinary Pork

In a previous blog I hinted that the price of food has affected my menu planning and some of you noted that you are in the same boat. Battered Potatoes

I was surprised at how delicious these little potato bites were. As a testimony to their ultimate yumminess–all five of my children ate them. (With appropriate amounts of ketchup of course.) These are great little tidbits if you’re looking to serve something for a party or as an appetizer. I think the secret is in the salt blend and what is nice about that is you can customize your own version. In my version, I don’t use pepper because my kids don’t like it. Layered Pork Chops with Potatoes and Onions

This is a great week night meal because it’s easy to prepare and simmers on the stove for quite awhile. Not quite as good as throwing it in the oven, but the simmering will yield meat that’s super tender. The layered parmesan adds complexity and just plain good taste to the dish. Yukon gold potatoes are especially known for their buttery flavor. Add a salad or some green vegetables and you essentially have dinner made!
