Low Fat Sugary Treats

children I don't know why, but my sweet tooth comes out in full force during the summer months. Maybe it's the thought of ice cream treats or simply the gut instinct that watermelon doesn't cut it as the "official" dessert of a meal. (Watermelon is more like a 'pre-dessert'.) But I do know that if I ate all of the sugar I wanted I would be approaching a summer swimsuit of grand proportions. (Think: Emmett Otter's grandmother's bathing suit.) In any case, it's in that vein that I offer you two delicious summer time treats that will not cause you to regret buying that bikini!

Delicious Fudge

You will need:

1 1/2 cups sugar substitute

2/3 cup evaporated 2% milk

2 tablespoons stick butter (*no substitutes)

1/4 teaspoon salt

2 cups miniature marshmallows

1 1/2 cups semi-sweet chocolate chips

1 teaspoon of vanilla

Directions:

Combine the sugar substitute, evaporated milk, butter and salt in a heavy saucepan. Bring to a full rolling boil over medium heat, stirring frequently. Boil and stir 5 minutes and remove from the heat.

Stir in the marshmallows, chocolate chips, and vanilla until completely melted and smooth. Pour mixture into a foil lined 8-inch square pan. Refrigerate at least 2 hours or until firm. Remove foil from the pan and fudge. Cut fudge into squares on a cutting board.

Deliciously Nutritious Strawberries 'n Cream Pudding Pops

This recipe has the added advantage of sneaking in good-for-you strawberries.

You will need:

1 pint strawberries

2 cups low fat milk

1 box of instant white chocolate or vanilla pudding

Directions:

Puree strawberries until they are smooth. In a medium bowl, prepare pudding according to package directions. Add the strawberry puree and swirl. Pour into pudding pop molds and freeze overnight.

To remove pudding pops from the mold, run under cool or tepid water for about 30 seconds. The pudding pops should slide right out.

Hi Valorie! I'm always searching for some new food ideas for my two girls and I was excited to find your postings and recipes. I just bought some popsicle molds last week and used them to make some chocolate pudding pops - I can't wait to try your Strawberry and Cream recipe. Bill Cosby would be proud!
