Fun Ways to Get Rid of Leftover Turkey

Thanksgiving hangovers are no fun. However, you can prevent the post-Turkey Day pain by being prepared. I’m not referring to an aspirin run; rather, I prefer hair of the dog treatments. If you gobbled til you wobbled on Thanksgiving Day, then get right back up on Black Friday and do it again, but with fun-filled, kicked-up turkey recipes like these: SPICY TURKEY SKILLET Ingredients: 2 pounds of leftover turkey, shredded or sliced 1 package taco seasoning mix 1/4 cup water 1 cup chunky salsa 2 cups corn 1 can (15-ounce) black beans, drained 2 cups shredded Mexican cheese blend 3 … Continue reading

Are You Making Things Harder on Yourself?

Still in a turkey coma? I wish I was, too much cleaning and decorating going on at my house. Remember the good old days when Mom just made everything magically appear and all you had to do was enjoy? When I was growing up the tradition was that Santa put the tree up on Christmas Eve. Looking back I’m not sure if that made things harder or easier. Especially when my mother was a single mother. It’s so hard to get everything ready all by yourself. I can’t imagine how hard that was to do alone. Get the kids to … Continue reading

Get Your Turkey Day Game On

Forget about playing Pilgrims and Indians. When you can host a Pumpkin Roll or a Turkey Hunt, dressing up is not nearly as fun. With Thanksgiving just a few days away, now is the time to pluck your brain for ways to keep your pint-sized guests entertained during the holiday. Some amusing ideas to keep the fun going long after the last piece of pumpkin pie has been devoured include: Turkey Hunt: Place turkey stickers on about 20 index cards and hide them around the house. Then, send children on a hunt to find the turkey cards. Award the player … Continue reading

Our Frugal Monday Night Dinner

One of my goals this year is to spend even more time in the kitchen doing some cooking from scratch. While this does take time, it reaps many benefits. I can serve my family good healthy food with minimal preservatives, and for a price that we can afford. Since I do most of the cooking for our family of five, I need to find filling meals that will stretch. The cost of food seems to be growing weekly, and the stores have more and more rules that make saving money with coupons not as easy as it used to be. … Continue reading

Last Call For Thanksgiving Leftovers

Are you still eating Thanksgiving leftovers? I posted a few simple, affordable and tasty ways you could breathe new life into leftover Turkey Day dishes, but I wouldn’t suggest you use any of them after tomorrow. According to health experts at the Mayo Clinic, you should not eat refrigerated Thanksgiving leftovers after Tuesday, December 1st, in order to prevent food poisoning. Doctors say they see an increase in food poisoning cases in the first weeks of December due to people eating spoiled Thanksgiving leftovers. Food poisoning (also known as food-borne illness) is caused by bacteria in contaminated food. Symptoms can … Continue reading

Turkey Posole

Posole is a traditional Mexican dish from the region near Jalisco. It’s generally made with pork and is typically served around the holidays. It’s a very thick soup that also includes hominy, garlic, onion, chili peppers, cilantro, and broth. This version is great for your leftover turkey. You can of course, serve it using leftover pork as well. Generally posole contains poblano chilies but I substituted jalapeno chilies instead because I prefer them. I’m sure if you are familiar with and love Mexican cooking–you’d know the difference. But if a lack of perceived authenticity doesn’t bother you, go ahead and … Continue reading
