The start of the Memorial Day holiday weekend is still a couple of days away, but my neighbors are already firing up their grill. The warm weather means more families will be cooking outdoors, grilling up summer favorites, including burgers, brats and steak. If you are planning on doing some grillin' and chillin' this long weekend, consider the following fabulous burger recipes: BACON AVOCADO BURGERS Ingredients: 1 1/2 teaspoon Worcestershire sauce 1 1/2 teaspoon salt 3/4 teaspoon pepper 2 pounds lean ground beef 6 slices American cheese 2 onions, sliced 2 tomatoes, sliced 12 pieces cooked bacon 3 avocados, seeded, peeled and mashed Lettuce leaves 6 sesame seed burger buns Directions: Combine Worcestershire, salt and pepper and ground beef. Shape into patties. Grill burgers to desired doneness. Top with cheese. Serve on bun with lettuce, sliced tomatoes, bacon and onion, then top each burger patty with mashed avocado. Makes 6 burgers. SALMON BURGERS WITH LEMON DILL SAUCE Ingredients for Burgers: 1 (16-ounce) can salmon, drained and flaked 2 eggs, beaten 1/4 cup chopped fresh parsley 2 tablespoons finely chopped scallion 2 tablespoons finely chopped red pepper 1/2 cup Italian seasoned dry bread crumbs 2 tablespoons lemon juice 1/2 teaspoon dried dill 1 pinch red pepper flakes 2 tablespoons olive oil 6 toasted hard rolls 2 cups spring mix lettuce 1 sliced tomato Ingredients for Lemon Dill Sauce: 1 cup mayonnaise 1 tablespoon fresh lemon juice 3 tablespoons fresh dill 2 tablespoons capers Directions: In a medium bowl, mix together the salmon, eggs, parsley, scallions, red pepper, 1/4 cup breadcrumbs, lemon juice, dill and red pepper flakes. Form into 6 firmly packed patties, about 1/2 inch thick. Heat grill to medium. Place patties on grill and cook for 4 minutes per side, or until nicely browned. To make sauce: In a food processor, combine the mayonnaise, lemon juice and dill. Pulse a few times. Place mixture in a bowl and stir in capers. To serve, place patties on toasted rolls with lettuce and tomato, and then top with sauce.
