Missing Thanksgiving? Try This Burger!

by Catherine Ipcizade | More from this Blogger

If you're like me, you only eat turkey once a year. Actually, I should clarify that. If you're like me you only make turkey once a year. After all, who needs the hassle of preparing a whole turkey more than that? Not me. I am notorious for turkey mishaps. The first Thanksgiving I had at my house I spent forever preparing special brine I'd seen on television. I then had to figure out what to put the brine in that would also hold the turkey. Once that was figured out, another problem followed. Where would I store the turkey for the 24 hours it had to soak? I lived in an apartment so I didn't exactly have a spare fridge on the back porch. Needless to say, I often stick to turkey breasts these days.

If you're craving Thanksgiving in summer like I sometimes do, here's a simple recipe for a turkey burger that will satisfy your craving and even leave you enough time to enjoy your day. And the best part? You don't have to clean a turkey to make it.

Here's what you'll need:

1 package of ground turkey breast (1 1/3 pound)

1 small Macintosh apple, finely chopped

1 small white or yellow onion, finely chopped

1 stalk celery, finely chopped

1 to 1 ½ tsp. poultry seasoning

Vegetable oil for drizzling

4 large Sourdough English Muffins (the sandwich-sized ones) OR 4 large hamburger buns

1-Cup canned cranberry sauce. (I prefer the smooth but you can use the whole berry if you prefer)

½ Cup mayonnaise

8 leaves romaine or butter lettuce

To Make:

Heat an indoor grill pan or a large skillet to medium heat.

Combine turkey breast, apple, onion, celery, and poultry seasoning in a bowl.

Form four equal-sized large patties. Drizzle each with olive oil to prevent sticking in the pan and to add moisture.

Cook for 6 minutes per side.

Toast English muffins lightly

Combine mayonnaise with cranberry sauce and spread desired amount on bread.

Add burger patty and top with lettuce.

Enjoy!
