More Meatless Meals for Lent

Another "Fish Friday" is upon us, and if you are tired of sipping calm chowder, heating up frozen fish sticks, or eating breakfast for dinner in an effort to make meatless meals more palatable, then you might find the following recipes helpful.

The Baked Tilapia and Seafood Stuffed Haddock are not only easy to make, but they may just make Friday night dinners during Lent something to look forward to, rather than dread.

SIMPLE BAKED TILAPIA

Ingredients:

2 Tilapia fillets (you could also substitute with red snapper, haddock, halibut, or orange roughy)

1 fresh lime

2 tablespoons olive oil

1/4 cup very finely minced yellow onion

1 seeded and diced Roma tomato

1 green pepper, sliced in thin strips

1/2 teaspoon garlic salt

Black pepper

2 large pieces of foil

Chopped fresh cilantro

Extra lime juice

Directions:

Preheat oven to 400 degrees.

Spray each piece of foil with PAM cooking spray or drizzle with a little olive oil.

Place 2 slices of lime on each piece.

Place 1 piece of fish on top of lime slices.

Drizzle 1 tablespoon of olive oil on top of fish.

Season fish with garlic salt and a little black pepper. Squeeze some fresh lime juice on top of fish.

Place onion, pepper and tomato on top of each piece of fish.

Close up foil to form packet.

Bake on a cookie sheet for 12 to 15 minutes or until fish flakes easily.

Carefully open hot foil packet.

Serve with cilantro and extra lime wedges.

SEAFOOD STUFFED HADDOCK

Ingredients:

2 Haddock filets (you could also substitute with shrimp, lobster, or other, white flaky fish)

1 tablespoon olive oil

1 stick butter, melted

1/2 cup finely diced onions

1/4 cup finely chopped celery

1/4 cup diced red pepper

1 (6-ounce) can lump crabmeat, drained

1 tablespoon dry white wine

1 fresh lemon, juiced

2 teaspoons Old Bay seasoning salt

2 sleeves Ritz cracker crumbs

2 tablespoons minced parsley

Directions:

Preheat oven to 350 degrees.

Saute onions, celery, and red pepper until soft.

In a bowl, combine vegetables with all of the ingredients except for the butter. Drizzle butter over the top. Mix well. If too dry, add a little more melted butter.

Place stuffing in Haddock. Drizzle with a little more butter, sprinkle with a little paprika and bake until seafood is done (about 20 minutes) and stuffing is a little browned on top.
