Very Berry Cheesecake

The price of strawberries, blueberries and raspberries has gone up quite a bit at my local market. Last month the grocer had strawberries priced at $5 (for 2 pounds), but since my family went out to a local u-pick farm I saved a ton of cash by putting my preschooler to work in the fields (kidding). At the farm we paid just $1 a pound for fresh, plump, juicy berries and I still have a pint left in the freezer. This weekend I will be using the last of the berries in the following recipe. It is a standard cheesecake, … Continue reading

Another Easy Mother’s Day Meal—Perfectly Simple Pasta

Dads you can do this! Mother’s Day is May 11th and all this week I have been guest blogging in FOOD sharing simple recipes that even the most culinary-challenged dad can whip up for that special woman who bore his children. This next recipe is just as easy as the others and it comes with an added bonus: it’s very affordable. There’s no arguing that mom is worth all the money in the world, but if you are battling high gas prices, rising food costs and a shrinking household budget then you might consider cutting back on excessive Mother’s Day … Continue reading

Easy Mother’s Day Meals-—Steak Stir Fry and Berry Parfaits

As I continue my guest blogging countdown to Mother’s Day I would be remiss not to include my sister-in-law’s favorite recipes. After all, she did serve as the inspiration for this series. Her husband (my brother) is not exactly the world’s greatest cook, but as a firefighter he is responsible for preparing at least one dinner a week for the guys at the station. (She jokes that he cooks more for his fellow firefighters than he does for her.) Consequently, his culinary skills are not that shabby. The following recipes are evidence of this fact. The first one is a … Continue reading

Rounding Out Your Mother’s Day Feast—Tropical Shrimp Salad

This week I have been guest blogging in FOOD in an effort to share some of my family’s favorite Mother’s Day recipes with you. I covered the main dish and everyone’s favorite part of a meal—-dessert, so this blog is dedicated to rounding out your Mother’s Day feast. The other dish my father (the self-appointed Mother’s Day chef) made sure was prominently featured on my mom’s big day was her favorite Tropical Shrimp Salad. It’s a simple side dish that packs quite a Hawaiian punch… and not just because we lived in the 50th State. You don’t have to be … Continue reading

Grilling Up a Mother’s Day Feast

While the rest of the world was dining out on Mother’s Day my dad consistently chose to use the occasion to unveil a new dish in honor of my mom. Since we lived in Hawaii the recipe typically involved my dad’s trusty grill and a few of his special spices. If your hubby is the family cook and grabs for the tongs instead of the telephone (to call in dinner reservations) on Mother’s Day then you might consider passing on these recipes to him. The first is a traditional baby back rib recipe (my mom loves ribs) that can easily … Continue reading

Pistachio and Chocolate Oreo Cookie Cheesecake

Mother’s Day is just a few weeks away, but for some moms the holiday doesn’t guarantee a day off from cooking. When I was growing up my dad did most of the cooking (he loves creating new recipes) so having him whip up a Mother’s Day feast was nothing special. However, there was one thing he wouldn’t attempt in the kitchen regardless of how special the occasion—-BAKE. That’s where I came in. Being the only daughter in a family of six I learned how to bake at an early age. I might not be the world’s best baker; however I … Continue reading
