Portabello Mushroom Stroganoff

Stroganoff is a traditional Russian dish that simply includes beef and sour cream. I know that I always add onions and mushrooms to my stroganoff but this is not part of the original recipe. Traditionally, the dish is served with potato straws (considered a traditional garnish in Russia) and includes a little tomato paste and mustard. The version that most of us are familiar with would more appropriately be called “American Stroganoff.” Here is a great vegetarian dish that a friend sent to me. Going vegetarian with a stroganoff is a great way to lighten the dish up since it … Continue reading

Roasted Veggie Enchiladas

My husband eats anything with cheese on it. It’s truly incredible. It’s as if the cheese somehow transforms the meal from “blech” to “oh la la.” I guess that’s the power of cheese. My husband also hates vegetables. In fact, he’s worse than the kids. He picks his peas out of the tuna noodle casserole while the kids happily munch on their food holistically with no sorting. Tex-Mex Pumpkin Patties

I’ve noted before that I’m always looking for ways to sneak more vegetables into my children’s diets. Somehow, steamed broccoli is gross but stick a little parmesan in it, and I’ve become a gourmet chef. (Who knew parmesan cheese had magical powers?) These flavorful vegetarian patties do get fried in butter but that still doesn’t take away the extra vitamin C & A. When we tried these, four of my kids liked it and the one who doesn’t like anything didn’t like these either. Overall, they got positive reviews from my test team. They are a little on the spicy … Continue reading

Rich and Creamy Zucchini Lasagne

I realize that this seems a little out of place considering the season but truthfully, around this time of year, if it’s not a holiday, it’s a busy night getting ready for the holidays. So I like to pull out my tried and true crock pot and casserole recipes right about now so that no matter how busy we are, we have dinner on the table waiting. There are three things that I really like about this dish. First of all, it looks like you fussed but you really didn’t. Secondly, it can be done ahead and anything that can … Continue reading
