Facebook has become a great place to find coupons. The problem is that there isn’t any quick and easy way to find out about them. This week, I would like to point out an episode from the Hold the Gluten podcast that is titled: “Pizza Perfection”. It talks about a place that makes delicious gluten-free pizzas. Super Easy Recipes

Sometimes it’s the simplest recipe and the little touches that can make all the difference. Recently I decided instead of coating the fish fillets in rice crumbs to try something different and so simple and with few ingredients. Cajun and Coriander Fish Fillets Ingredients Olive oil for cooking 2 fish fillets (your choice- whatever type of fish you like best. I mostly use freshwater basa fillets. 1 -2 teaspoons Cajun spice I handful fresh coriander or 1-2 teaspoons dried coriander Method Sprinkle fish fillets with Cajun spice and chopped coriander. Cook prepared fish in a little oil in a frying … Continue reading

Shopping Tips

Check out the specials in shops from catalogues and mark those of interest. Only buy things on special if they are products you are actually going to use it in the near future. It’s not a bargain if you are not going to use it. Shop from a list, written out at home after checking the pantry and meals planned to see what you will need. Read labels carefully, especially if you have allergies to certain like sulfites or preservatives. Don’t assume low fat means it is healthy for you and low in calories. Often when they take out fat … Continue reading

Mick’s Mince Loaf

I love it when Mick decides to take to the kitchen and this is another of his specialties. In fact I have never made this recipe at all. The original recipe used a cob loaf and was not gluten free and we bemoaned the fact for a while that we could no longer have it. Then we thought why can’t we? And why does it have to be a cob loaf anyway? Wouldn’t a gluten free bread loaf work just as well? In fact we decided it might even work better. Mick decided to try it. He made a loaf … Continue reading

More About Gluten Free Flours

Rice flour is probably the most commonly used flour for the person on a gluten free diet. However, white rice flour is not particularly nutritious. So if you’re looking for a more nutritious alternative try brown rice flour, which as its name suggests is made from brown rice. I always use brown rice instead of white rice for meals, so it makes sense to use brown rice flour as well as it has higher fiber content because it includes the bran of the rice and hit has not been over processed. It is however heaver than white rice flour so … Continue reading

The Joys of Cooking

One of the joys of cooking is how easy it is to alter a recipe once you have the basics. It’s so easy to add individual touches and change it just a little, so that it doesn’t always taste the same. On the weekend my daughter and I were chatting as we made Thai Chicken Rolls. Those for me were made with gluten free frozen puff pastry. Those for everyone else were made with normal frozen puff pastry. It’s funny watching her cook. She’s much the same sort of cook I am. I rarely measure but estimate what looks right. … Continue reading

More Sweet Treats for the Lunchbox

Trying to think of something for a sweet change to put in the school lunch box or for those after school snacks? Here are a couple more gluten free sweet suggestions. Of course there’s no reason grown ups won’t enjoy them every bit as much as the kids. They’re both really easy to make and won’t take long, which is always a plus in my book. Apricot Fruit Bars Ingredients Three quarters cup dried apricots Hot water 2 cups SR gluten free flour Half teaspoon baking powder 1 cup raw sugar Three quarters cup coconut 6 ounces melted margarine Half … Continue reading

Gluten Free Sweet Treats for Afternoon Tea or Lunchbox

If you have a gluten free person in your family it sometimes requires a bit of extra thought too come up with ideas for supper, morning or afternoon teas or to go in the school lunch box. Here are a couple of suggestions. Unfortunately many gluten free biscuit and slice recipes use honey which is not good for anyone allergic to it as I am. These two are honey free as well as gluten free. I’m sure your family will enjoy both these simple to make recipes. Children might even be able to help make them. Golden Crackles Ingredients 4 … Continue reading

Lemony Chicken and Lentil Balls

It can sometimes be a challenge to find recipes when you are on a special diet. Today’s recipes are both simple to make. Both of them are not only gluten free but dairy free as well. Grilled Lemony Chicken Ingredients 1 ounce margarine or butter 2 teaspoons brown mustard seeds or dried mustard (You can use prepared mustard instead but make sure it does not contain wheat as many do. Personally I like the seeds) 1 teaspoons black pepper 1 clove crushed garlic 3 diced green shallots 1-2 teaspoons grated lemon rind (this will depend on you individual taste. I’d … Continue reading
