Quick Chicken Recipes: Carmelilzed Garlic Chicken and Chicken Cacciatore

I love chicken, but my husband is so-so about it unless it is a great recipe. If that recipe involves noodles then it makes him happier to see it on his dinner plate. Both of these recipes are yummy, easy and best of all - quick!

Caramelized Garlic Chicken

For this recipe, you will need olive oil, minced garlic cloves, brown sugar, non-stick cooking spray, and four boneless, skinless chicken breasts.

Preheat your oven to 500 degrees. Place aluminum foil in a shallow roasting pan and spray it with a non-stick spray. In a skillet, heat 2 teaspoons of olive oil over medium heat. Add four minced garlic cloves and let them cook for two minutes while stirring. Remove the skillet from the heat and stir in 4 teaspoons of brown sugar. Place the chicken breast in the pan and spread part of the garlic mixture over each one. Cook the chicken for 15 minutes or until it is tender.

Slow-Cooked Chicken Cacciatore

For this recipe, you will need four skinless chicken thighs, four skinless chicken legs, one 15 ounce can of chunky Italian tomato sauce, one 4.5 ounce can of whole mushrooms (drained), dried oregano leaves, one small onion, all-purpose flour, minced garlic cloves, spaghetti noodles, and one small bell pepper.

Slice your onion. Cut your bell pepper into one-inch slices. In a 4-quart slow cooker, place four chicken legs, four chicken thighs, onion, bell pepper, can of chunky Italian tomato sauce, one 4.5-ounce can of whole mushrooms, 1 teaspoon of dried oregano leaves, and two cloves of minced garlic. Mix well then let this cook over low heat for 6 to 8 hours. Using a slotted spoon, remove the chicken and vegetables from the slow cooker and place them in a bowl. In a small bowl, combine 1/4 cup of water and 2 tablespoons of all-purpose flour. Slowly add that to the broth in the slow cooker. Turn the heat on high and cook for another 5 minutes or until thickened. Add the chicken and vegetables back into the slow cooker. Cook the spaghetti in a separate pan then serve the chicken mixture over that.
