Quick Coffee Cakeby Catherine Ipcizade | More from this Blogger 24 Jul 2006 03:35 PM Friends coming over? Need to fix something special fast? Tired of the same old cereal in the morning, or worse, the same old breakfast bar on the run? Try this simple recipe today! For this recipe you'll need: 2 ¼ cups flour, sifted 1 Cup milk 3 ½ tsp. baking powder 1 tsp. salt 1/3 cup solid shortening 1/3 cup sugar 1 egg For the topping: ¼ cup butter ¼ cup sugar 1 Cup dried breadcrumbs 1 tsp. cinnamon To Make this Recipe: Preheat oven to 375 degrees Sift together the flour, baking powder and salt. In a separate bowl, cream together the shortening and sugar, beating until fluffy. Add the egg and beat well. Next, add the milk. Add the flour mixture to the wet mixture, stirring only enough to moisten. Pour into a greased 8-inch square baking pan. Cream together the butter and sugar. Add bread crumbs and cinnamon and blend well. Sprinkle over the cake dough. Bake at 375 degrees for 40-50 minutes. Serve hot. Tips: Try adding additions to this recipe to spice it up a bit. A little nutmeg with the cinnamon perhaps, maybe some vanilla extract? Raisins would be lovely in this recipe, as would the addition of nuts.
